The grapes used to craft The Katana Chardonnay were handpicked, chilled overnight, and whole bunch pressed. The juice was rough settled, and transferred to French oak barriques for fermentation. This process led to the creation of a pale straw coloured wine with golden yellow highlights along the edges. This wonderful Chardonnay presents a supple core of citrus blossom and white stone fruit characters, enhanced by mineral notes. The juicy palate contains flavours of bright fruits and French oak supported by crisp acidity, ending in a lively and captivating climax. This alluring white wine can be enjoyed within 5 years from vintage. Drink it with potato soup, roasted vegetable pizza, and chorizo and sweet potato risotto.

Geoff Weaver Sauvignon Blanc from the Adelaide Hills is quite possible the region's best example of this aromatic variety. The bouquet shows lifted varietal characters of green pea and passionfruit and the palate is textured and long.

Penfolds Maxs Chardonnay is a tribute to former Chief Winemaker Max Schubert, a legend in Penfolds history. Pale straw in colour with green hues, this wine has a very nice textural and creamy palate with a soft line of acid fading ever so slowly to a distant palate horizon.

Medium straw in colour this wine by Sidewood displays lifted white peach, fig, pear and pistachio nuts on the nose. This barrel fermented Adelaide Hills Chardonnay offers superbly structured characters. It is tight and lean, laced with citrus lime and tropical fruit characters. Some lovely subtle complexities from careful oak maturation on lees include nutmeg, sage spice and pistachio flavours which linger on the after taste. A lovely crisp wine now, that will benefit from some short term cellaring once bottled. Serve with Asian style broth, mushroom based dishes or Lobster bisque is a great match to this Chardonnays complexity in flavour, but finesse in structure.

Of particular note is the Grace's vineyard in Watervale which supplies Riesling for the lauded 'Watervale Riesling' label. Grace's is a dry grown, west facing vineyard that sits on the classic 'red loam over limestone' Watervale soils and produces wonderful Riesling fruit. Similarly, the Smith and Molloy vineyards in the Polish Hill River area also contribute wonderfully intense Riesling fruit of the highest order. The O'Leary Walker range focuses on some premium regional varietals, taking the best bits from all around South Australia. The theory behind this is to draw on the grape varieties that excel in these quite different viticultural climates.
