Sourced from an the outstanding 2008 vintage, the Shelley Anne Cabernet Sauvignon shows cassis, mulberry and blackcurrant with that typical bay leaf and cedar undertones. The 2014 Cuvee d'Elevage Cabernet is an outstanding expression of a northern Margaret River Cabernet. Only the best fruit parcels combined with finest French oak lead to a perfumed bouquet of Cassis, ripe berries and cedar. The complex palate shows ripe and silky tannins, pure fruit intensity with red berries and cassis. Its finely structured with long lasting finish of cigar box and vanilla. Drink now or until 2028.

A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Blend the rich upfront flavour and a lingering aftertaste of Cabernet, with the silky softness consistency of Shiraz, add a splash of Merlot, and you have a Rouge of super delicious deliciousness. This blend has been simply foot-crushed, hand-plunged during wild ferment and basket pressed to old oak for some sleepy time. The Cabernet, Shiraz & Merlot are all from our Quindalup vineyard.
