Complex and layered with wonderful fruit purity, Yabby Lake Single Vineyard Chardonnay is a finely structured, tightly honed style. The fruit is a hand-picked field blend of different clones. Each parcel is vinified separately and is pressed into tight grain large French oak puncheons for wild yeast fermentation. Eleven months maturation on lees imparts attractive nutty complexity.

An elegant and restrained cool-climate style Shaw & Smith M3 Chardonnay has been at the forefront of the modern Australian Chardonnay renaissance. Displaying notes of nectarine and citrus underpinned by crisp acidity, it evolves over time to reveal layers of toasty, mealy complexity.

The wines of Fraser Gallop Estate are intensely flavoured, textured and complex. Only the finest quality French oak barrels are used for all Fraser Gallop Estate wines, with very specific Bordelais coopers used for the Cabernet Sauvignon and Semillon Sauvignon Blanc blends, and Burgundian coopers for the Chardonnay. The complete winemaking process takes place at the estate - picking to vinification to barrel maturation to bottling to cellaring. Fraser Gallop Estate is an estate grown, produced and bottled wine. Flavours of lemon curd and grapefruit with searing length. A wine with clarity and finesse. A tightly focussed and very precise wine showing seamless fruit purity with the lightly toasted French oak very much in the background. Cambria was originally part of the Tepusquet Vineyard. Planted between 1970 and 1971, this ambitious venture helped establish Santa Barbara County as a world-class wine producing region. The Cambria portion of property was purchased in 1986 by Barbara Banke. Today, Cambria is still 100% family owned and the wines are 100% estate-grown. Ripe fruit, floral and spice aromas dominate the nose of the Katherines Vineyard Chardonnay. Grapefruit, pineapple, white peach, citrus blossom, and apple flavors are balanced by a bit of wet stone, subtly oak spice and bright acid.

Defaix's Chablis comes from a range of parcels with different vine age and aspects. Aged on fine lees in glass-lined tanks, this is a textural, and uplifting Chablis rich in oyster shell and citrus notes and driving freshness on the finish.

A medium bodied wine with a fleshy mouth feel, displaying peach, nectarine, citrus blossom and subtle sweet oak. Well integrated acid with underlying complex savoury notes and a lingering finish.

With winter rains, healthy and wholesome grapevines protruded out of the soil at the Jansz vineyard. Grapes were picked from a single block in the vineyard, the whole bunch pressed, and fermented and aged in French oak barriques with more than five years on lees. This extensive winemaking procedure resulted in the creation of an elegant Chardonnay wine displaying pale gold colours with an exceptional bead. The lifted bouquet gives out scents of truffles, oyster shells and preserved lemons coupled with underlying nuances of honey nougat and Amaretti biscuits. The complex and intense palate is an amalgam of brioche, roast almond nougat and crystallised lemon nuances that balance the chalky minerality and creamy texture of the wine to provide a refreshing and lengthy climax. The wine possesses an alcohol content of 12% and is a great pairing with whole baked snapper with ginger and citrus.
