Utilising centuries of knowledge and tradition, yet not restricted by it, Starward is the brainchild of David Vitale who set out to harness the very best of Australia's barley, barrels and climate to create the ultimate new world whisky. Years of experimentation, adjustment, trial and even more adjustment has created Starward, a whisky that will challenge your perceptions of what Whisky can be. Artisan Victorian barley is sourced to begin the bespoke process which ends up in aged Australian Apera casks that have been re-coopered, re-toasted and re-sized. All of which help create a Whisky of smoothness, sweetness and unparalleled complexity.

Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

Our premium baijiu is aged in high-fired terracotta pot for a minimum of 20 years. Made of our six type of top quality grain Sorghum, Wheat, Mung bean, Corn, Rice, and Sticky Rice. Aged 4yrs in Portuguese sourced Port barrels and re-conditioned in Tasmania, Iron House pure Tasmanian Single Malt Port Cask is an enticing drop. The initial pour sits in the glass with a reddish orange embered hue and greets the nose with a stone fruit, red wine, buttery, sweetened spiced aroma. A palate of red berried wines, dried dark fruit, orange zest, hazelnut oak warmth with a touch of dark chocolate, tobacco and heat.

Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.

Bakery Hill is a new Australian venture into the generally exclusive world of Whisky production. We say exclusive, because few distillers outside of Scotland have yet managed to create a whisky that approximates to the quality or style of the Scottish original, or when they have, the whisky has usually relied upon the importation of key ingredients from the ‘homeland’. Bakery Hill’s Single Malts, despite their youth, are very promising initial efforts, and as the spirits spend longer in barrel, one can anticipate some very interesting results. As with classic malts, Bakery Hill uses only malted barley [ from Tasmania ], yeast and water to achieve its flavour and aroma. No caramel is added in order to enhance the appearance. Barrelling at Bakery Hill is done using select second fill American Oak Bourbon barrels. French Oak casks are also used for the production of the classic double wood style. Deep red color. The nose is complex with red fruits and figs, followed by aromas of blackcurrant. On the palate, the wine is round with soft tannins, displaying generous aromas of blueberry and blackberry. Well balanced, with a good persistence on the finish.

After ceasing production in 2015, The GlenDronach Revival Aged 15 years now returns to the core range of the distillerys line-up. The expression embodies The GlenDronachs signature style of Spanish Sherry Cask maturation in fine Pedro Ximénez and Oloroso sherry casks from Andalucía, quietly growing in stature for 15 years in the darkness of our dunnage warehouses.</ >< >In flavour, the expression offers sumptuous notes of dark fruits, rich chocolate and manuka honey with an enveloping, memorable finish worthy of this monumental malts history. This luxuriously sherried Highland Single Malt Scotch Whisky is bottled at 46% ABV, non-chill filtered and natural in colour.
