Mac has a long history in Yarra Valley, starting out at Mount Mary before honing his skills in Burgundy and then returning back to the Yarra to start his own project. The Mac Forbes villages range is a reflection of the incredible diversity of one of Australia’s premier wine regions, the Yarra Valley. Each one shows the terroir of the site, while being made with restraint and traditional winemaking techniques.

Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. The aromas of pineapple, white peach, nectarines and melon start the senses. On the palate you will also taste rockmelon, white peach and tropical fruits. This wine has a long length of flavour and a creamy mouth feel, finishing with elegant acidity.

Gary Farr is still one of Victoria's true Chardonnay maestro's and his Chardonnay By Farr is another example. Taken from the original By Farr vineyard, this is a clearly a wine of true clarity and finesse. Flavours of melon and hints of spice with wonderful oak integration mean this wine is simply delicious upon release, but handle some careful medium-term cellaring.

The Chardonnay grapes used to create Vintage Blanc de Blancs were picked, pressed and then fermented to retain intense fruit flavours. The resulting wine shows a bright straw colour with light green highlights and a beautiful bead. The fragrant bouquet is perfumed with lovely aromas of cream and peaches, with light suggestions of citrus and honeysuckle. The elegant palate is filled with peachy flavours and zesty lemon acidity, offering a silky mouthfeel and a clean finish. This lighter bodied Blanc de Blancs tastes excellent with sashimi, sushi, and foie gras terrine.
