A benchmark chardonnay from master wine-maker Rob Dolan out of the Yarra Valley. Packed full of grapefruit, white peach, cashew & nutmeg aromas brimming from the glass followed by a mineral consistency on the palate with extended length on the finish. Will easily cellar for another 5 years if you can wait that long.

Bright straw yellow. Complex bouquet, with notes of pear, white peach, and barley sugar with barrel ferment characters. Fresh and bright, with a generous mid palate weight, and a creamy texture, ripe white peach, oatmeal and pear balanced by citrus acidity and cedar spiced - oak finish. Chardonnay was destemmed and pressed direct to barrel for fermentation using wild yeast. Then matured in French oak barriques (30% new) for 12 months, with regular lees stirring and minimal MLF, then fined, filtered and bottled in February 2018. Enjoy now or cellar for 4 to 8 years.

Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. Brilliant pale straw colour with tints of green to the outskirts and a watery hue. Aromas of nectarine, white peach and dried honey have a light toast overlay. Delicate citrus and cashew notes are also evident. Fleshy nectarine and white peach flavours line the elegant mid weighted palate with notions of dried honey and faint cashew lying underneath. Finishes with good freshness and a refined aftertaste. Drink over the next 3-4 years. Alc. 12.5%
