At Mount Mary they aim to make a Chardonnay of great length that is able to reach a balance between complexity & finesse. Unashamedly Burgundian in concept, local Yarra Valley practices are employed to fully express the unique terroir, including the wine not going through Malolactic fermentation as Mount Mary's cool-climate leaves the fruit with ideal acidity when picked. Matured in 20% new French barriques with the remainder in older barrels and large casks and along with grape solids, this is a Chardonnay of impressive texture and complexity.

Australia's premier cool climate Cabernet. It was John Middleton's dream to create such a wine and purchased the Mount Mary property in the Yarra Valley in 1971 to persue this dream. Quintet is his dream realised and is a blend of the classic Bordeaux varieties of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec.

Cuvée du Perce Neige Bourgogne Blanc A soft and delicious introduction to the software behind the greatest database of Chardonnay in the world, written by one of its greatest programmers. Laurent Ponsot. A blend of different parcels, sourced across a litany of trustworthy growers and venerated communes in Burgundy. Yellow fruit accents are framed by a wisp of oak, a waft of phenolics and a crunchy skein of mineral pungency. The finish is long and firm, yet this is a wine of immense versatility at the table to be enjoyed on the earlier side.

Penfolds Yattarna Chardonnay displays an initial bouquet of slate and wet stone, with nuances of lightly roasted almonds. Subtle hints of citrus, shrouded by nectarine and nashi pear fruits. On the palate, a spiced multi-citrus compote with a very delicate acidity. Balanced and will develop exceptionally well with cellaring.

Jean Noel Gagnard handed his eponymous Domaine to his daughter Caroline Lestimé in 1989. She had studied business in Paris, before returning to the village to take over the reins of the family estate, and had to handle male chauvinism at its most rampant. Nonetheless, she has followed her own convictions, and enhanced (rather than diminished) the reputation of this fine producer. One of Victoria's true heritage wines, Yarra Yering Dry Red No.1 is primarily a blend of Cabernet Sauvignon with Merlot, Malbec and a touch of Petit Verdot. Planted on a historic Yarra Valley site by the late Dr Bailey Carrodus, this wine is full of complex aromas of plum and berry which is followed by rich fruits with an oak and cedar slant. A wine drinking well now and value for the true wine lover.

An exceptional fermentation with a mineral style which wonderfully accompanies Ossetra caviar or fi ne marinated sashimi or grilled fi sh.
