2006 Patrick of Coonawarra Home Block Cabernet Sauvignon. The grapes were grown at the Toccaciu Coonawarra estate, and the wine was matured for 26 months in French and American oak; while I am not a fan of ProCork, this is a very attractive wine, which has cruised through six, rising seven, years, the cassis and cedar flavours supported by very fine but persistent tannins.

A purposely early harvest to highlight a fresh red fruit spectrum, naturally lower alcohol, whole bunch inclusion, wild ferments, and the use of larger oak for maturation are just some of the techniques employed to make these beautiful food friendly wines. Bright cherry and blueberry complement more savoury elements of stalks, pastry, and spice. There is a light yet expansive quality to the palate. Shiraz is thought to be one of the oldest grape varieties. It is typically deeper in colour just as the colour of this wine from the Great Western area. It has the elegance of a cool climate wine; Black peppery and sometimes mint characters with warm spices on the nose with great tannins and oak structure on the palate. St Hugo Cabernet Shiraz displays a dark ruby red with purple hues. The bouquet of dark forest fruits such as plum, blueberry and cassis lead into a beautifully complex palate of blackcurrent, sweet plum and chalky tannins. There is a underlying savoury oak hint and a finish of lingering dark chocolate.
