Lark is Tasmanian whisky, proudly unique in character and style. Forty Spotted Rare Tasmanian Gin is hand distilled in small copper pot stills using the steeping method of Gin production and use of traditional botanicals of juniper berry, coriander and lemon peel creating a traditional London Dry style, but incorporating something a little bit special to give this Gin a unique finish.

Distillers Release is a bespoke gin is made from scratch in small batches in Tasmania. carefully distilled from a premium grape base, pure Tasmanian water and a unique blend of locally grown (fresh lime, lemon and rose) and internationally sourced botanicals.Layered notes of green cardamom, fresh lime and lemon,juniper (organic), coriander, a hint of white peppercorn and three cuts of rose makes this gin ideal for creating your favourite cocktail of sipping slowly over ice.

Poltergeist Gin is produced in small batches at the historic Shene Distillery in Pontville, Tasmania. Poltergeist Unfiltered retains the full flavour profile of all twelve botanicals, completely covering the front, middle and back of the pallet with a long lingering finish. It may ghost over ice due to the density of flavouring oils derived from the botanicals. The flavour profile is earthy and robust, and the balance of brawny botanicals like liquorice root, cardamom, orris root and Tasmanian pepper berries, with the more traditional citrus and nutty gin flavours, is unique. Drink it straight over ice, in a classic martini or a negroni.

These Willamette variety raspberries are grown in the deep south of Tasmanian, in the foot hills of our world heritage Mount Field National Park at the Westerway Raspberry Farm, owned and operated by the Clark family for over 25 years. These raspberries, originally from the north-west of USA are a sweet and juicy variety, great for jams, juicing and of course gin ;). With a very short shelf life and harvest season (4-6 weeks) you have to be quick to get your hands on the real thing, but if you miss out, don’t worry…. we have the next best thing :).
