The first spirit in the World to be made from sheep whey and recent winner of Worlds Best Vodka (World Vodka Awards 2018) judged in London amongst the worlds leading Vodkas. Each Bottle is hand sprayed black and the label hand written and signed by Ryan Hartshorn (Head distiller) The spirit is made by fermenting the lactose sugar within the whey which is the waste from our sheep cheesery which is on the same farm where we milk our animals. Very Small 80-100 bottle batches. The spirit is unfiltered which is rare for a vodka. This means you will get a lot of character remaining from the whey which is a sweet nose and creamy mouth feel. This vodka is designed to drink straight at room temperature. Serve alone in a large aromatic glass or as a vodka martini with a pair of quality green olives.

Forty Spotted Rare Tasmanian Gin is hand distilled in small copper pot stills using the steeping method of Gin production and use of traditional botanicals of juniper berry, coriander and lemon peel creating a traditional London Dry style, but incorporating something a little bit special to give this Gin a unique finish.

First ever vodka in the world to be peat smoked. Using Tasmanian Peat from the North West Coast of Tasmania which has almost identical climate and weather conditions to that of Scotlands west coast. This spirit captures all of the unique qualities of our sheep whey vodka and infuses them with the pervasive character of Tasmanian peat smoke. This results in a balanced sipping Vodka. The spirit is divisive; yet elegant.

Poltergeist Gin is produced in small batches at the historic Shene Distillery in Pontville, Tasmania. Poltergeist Unfiltered retains the full flavour profile of all twelve botanicals, completely covering the front, middle and back of the pallet with a long lingering finish. It may ghost over ice due to the density of flavouring oils derived from the botanicals. The flavour profile is earthy and robust, and the balance of brawny botanicals like liquorice root, cardamom, orris root and Tasmanian pepper berries, with the more traditional citrus and nutty gin flavours, is unique. Drink it straight over ice, in a classic martini or a negroni.

Lark Tasmanian Single Malt Whisky is proudly unique in character and style. Entirely made by hand, Lark consistently distills some of the worlds most prized Whiskies, with no more than 100 litres at a time. Distilled in locally crafted copper-pot stills, this exceptional classic cask is the flagship product of the Lark Distillery. This Whisky is best described as a complex mix of vanilla-caramel-maple syrup with some slightly spicy, floral notes and gentle hints of fresh pepper on a flavourful lingering finish. Sláinte is a marriage of premium mature Single Malt Whisky, with a unique distilled spirit of herbs and spices, produced in smaller copper pot stills. They are carefully combined over time, to give the right complexity of character, spiciness and sweetness; whilst maintaining the overtones of the acclaimed, small batch Single Malt Whisky Lark is now famous for.

Our Bespoke Gin is made from scratch in small batches in Tasmania. Carefully distilled from a premium grape base, pure Tasmanian water and a unique blend of Tasmanian grown (fresh Lime and Rose) and internationally sourced botanicals (twelve total Botanicals)
