Inspired by the solar system’s largest planet, our Jovian Wilderness Dry Gin is big, bold and distinctively beautiful. This unique dry-style gin is distilled with juniper and contains a small core of our silver spirit. Like the swirling clouds that encapsulate Jupiter, this spirit will envelop your senses in an atmospheric storm of botanicals. Notes of licorice and cardamom, underpinned with Tasmanian botanicals, pepperberry, hemp hearts and lemon myrtle to remind us of home. Ponder the mysteries of Jupiter and beyond while you sip this gin over ice, mixed with tonic and garnished with a slice of fresh Earth cucumber.

100% Tasmanian and 100% unique. Made from carefully harvested 100% Huon Valley Pure Mist Droplets, native Tasmanian pepper berries and sweet citrus. Our Gin produces an aromatic and subtle peppery taste, smooth on the pallet and perfectly balanced when served with a twist of lemon or lime. Equally good on the rocks or with a dash or soda or tonic. With a 4900 bottle limited edition annual production, Pure Mist is the one to add to your collection in 2022.

The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.

Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.

Tasmanian Single Malt Sherry Cask Matured. Colour: Dark Copper Nose: Caramel & raisins Palate: Lifted floral notes, caramel and dried fruit sweetness with some white pepper savory hints Finish: Delicious long and slightly dry finish which is indicative of some very fine old wood. A slightly smokey note that suggests peat but comes from the heavy cask charring

Tasmanian Single Malt Whisky. Aged in ex Makers Mark Bourbon Cask Nose: Immediate sweet notes of vanilla and crème brulee with fruity and herbaceous undertones. Palate: From a bright and sweet opening the flavours build across the palate to a rich, clean alcohol-driven crescendo culminating in a big, warm and comforting glow of spicy tannin hints and peach flesh. Finish: Long and warm with the afterglow fading into semi-sweet caramel and lingering stone-fruit tingles
