Saddleback is the second label to Greg Hay's Peregrine and the Pinot Noir is made using fruit from the Gibbston and Cromwell Basin sub regions of Central Otago. Light, elegant with black cherry and plum fruit, held together by a fine tannin structure and refreshing acidity.

This Pinot noir is the flagship from Two Paddocks an organically grown barrel selection from the estate properties. As in the vineyard, the wine is hand crafted using traditional methods including a 25% whole bunch indigenous fermentation and hand plunging. Maturation is in French barriques for 11 months, using a mix of older and new (25%) barrels.

The lively palate shows lime, lemon and spice with hints of crushed apple. Mouth watering laser like acidity will ensure this wine will live for many years. Juice was cool fermented in stainless steel and the wine held on light lees until bottling in July 2018.
