Introducing Cedar Fox Distilling Co, a newcomer to the Australian independent spirits space with the release of its gin. A savoury dry gin with peppery fragrant earthy aromas, it incorporates urban botanicals such as Juniper Berries, Coriander Seed, Lemon Peel, Lebanese Cucumber, Sichuan Peppercorn, Lemon Verbena and Rosemary. The result is a simple yet expressive character.

This gin has rested in French oak barrels for several months. The caramel aroma and flavour is derived from the natural sugars of the barrel. This gin is smooth and displays strong flavours of caramel, vanilla and honey. Enjoy this gin on the rocks, with a splash of soda or ginger ale.

This gin has been crafted using both maseration and infusion methods to create a rose pink colour. The colour comes from grapefruit, pomegranate, blood orange, lemon and organic rose petals. We recommend a garnish that is not too overpowering such as cucumber. Conveniently, it is not necessary to squeeze lemon or lime as it is already packed with citrus. Enjoy this gin with tonic, in a cocktail or on the rocks.

Tasmanian Dry Gin, A classic London Dry style with a Tassie twist has 11 botanicals that hero the native pepperberries and herbs found on the way to Cradle Mountain. Wildly fragrant with alpine freshness, juniper, coriander and Tasmanian highland pepperberries with a hint of liquorice root.

Gin made at the Glen Ewin Estate Adelaide Hills (South Australia). Willa, the owner of the farm owns 12000 fig trees. 25 years chemical free, Estate grown Figs poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate. Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.

This delicious Graperuit-Cello Gin Liqueur is made in a lemoncello style. It is intentionally made not too sweet with an edge of bitter, to be true to the fruit. Yellow grapefruit peel is steeped in the gin, then balanced by just the right amount of sugar. It is perfect served as a short G&T, to retain some of the bitterness, and garnished with a slice of blood orange or a piece of orange peel.
