Introducing Cedar Fox Distilling Co, a newcomer to the Australian independent spirits space with the release of its gin. A savoury dry gin with peppery fragrant earthy aromas, it incorporates urban botanicals such as Juniper Berries, Coriander Seed, Lemon Peel, Lebanese Cucumber, Sichuan Peppercorn, Lemon Verbena and Rosemary. The result is a simple yet expressive character.

A household name in Italy and a cult hit abroad, Fernet-Branca also made its name as one of the popular drink in Argentina. Its thick, bitter flavour and spices, makes it something of an acquired taste. It was said to contain more than 27 different herbs and spices including aloe, rhubarb, and saffron, sourced from four continents. Popular served at room temperature or over ice. Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.
