Our tropical take on a traditional sloe gin; swapping sloe berries for locally grown Far North Queensland Davidson Plums. The plums are steeped for up to 3 months to produce a truly unique sloe style gin. With an earthy aroma that is reminiscent of plum jam, stewed rhubarb and a touch of sweetness. It makes for a perfect after dinner gin. VOL / 500ml ALC / 33.5%

Aged 4yrs in Portuguese sourced Port barrels and re-conditioned in Tasmania, Iron House pure Tasmanian Single Malt Port Cask is an enticing drop. The initial pour sits in the glass with a reddish orange embered hue and greets the nose with a stone fruit, red wine, buttery, sweetened spiced aroma. A palate of red berried wines, dried dark fruit, orange zest, hazelnut oak warmth with a touch of dark chocolate, tobacco and heat.

Each 500ml spirit lid is manually dipped in wax with a silver foil swing tag, presented in a hand wax dripped, thick cardboard cylinder box. As each Gift Box is manually waxed, no two boxes are the same, some minor organic imperfections may be visible.Vodka:Vodka is known to be one of the purest drinks in the world. In fact the word Vodka is derived from the Slavic word for water. This little bottle of purity is perfectly proportioned to mix two cleansing Vodka Tonics. Its also the main ingredient in various cocktails such as the Vodka Martini, Cosmopolitan, Screwdriver, Black or White Russian, Moscow Mule, and Bloody Mary. Weve heard on the grapevine that Vodka is said to relieve tension better than a glass of wine so we think its the perfect tonic to help you relax at the end of a busy day. Pepper famed bourbon distiller, who then introduced it to New York high society during his frequent visits to the Waldorf-Astoria Hotel bar in New York. They clearly embraced it, given how the infamous Mad Men had such a taste for it 80 years later in the 1960s Manhattan advertising scene. The Old Fashioned has had a makeover or two over its time. But this smooth, bitter, sweet simplicity of Bulleit Straight Bourbon Whiskey, traditional Angostura Bitters, and sugar cane syrup is a tonic that Don Draper himself would approve of.Serving Suggestions:Serve Dr Onyx Old Fashioned gently swirled in a short glass over ice, with a twist of orange zest. Pinch the zest so the oils spray over the drink before dropping it into the glass.

Hints of dark fruit combine with notes of vanilla bean, salted caramel and marzipan. These flavours meander with the Shiraz spiciness of cinnamon and nutmeg that culminate in a wonderfully long complex finish. The alcohol heat is silky smooth and warms the soul.
