Barbadillo Amontillado begins as a Manzanilla, however, during 3 years in the Solera system, yeast on the surface of the wine consumes all the sugars and dies away, wine begins to oxidise and turns a deep golden colour. After a further 3 years, the wine is blended with a little Pedro Ximenez and fortified to 17%.

Dolin Dry Vermouth

Founded in 1815, Dolin is among the few remaining independent producers of Vermouth in the world and the last producing Vermouth de Chambery, still made according to the principles which earned Chambery, France's only A.O. Boronia Marsala All 'Uovo

Smooth and luscious on the palate with lovely texture, Boronia Marsala has flavours of raisins, muscat grapes and subtle caramel. A rich fortified wine style, Boronia Marsala retains fine acidity which keeps the finish in balance. Boronia Marsala can be enjoyed with a strong cheddar cheese after dinner and is also a popular ingredient when cooking.

Cockburn's Fine Tawny Port

Cockburn's Fine Tawny Port is sourced from fruit grown in the lower Douro region that produces a lighter, more fragrant style of fortified wine. Losing a touch of its colour during maturation in oak, the tawny takes on flavours of butterscotch and a nice nuttiness. Perfect as an after-dinner dessert wine, or chilled down and served with an array of fine nuts such as almonds and walnuts.
