Barbadillo Amontillado begins as a Manzanilla, however, during 3 years in the Solera system, yeast on the surface of the wine consumes all the sugars and dies away, wine begins to oxidise and turns a deep golden colour. After a further 3 years, the wine is blended with a little Pedro Ximenez and fortified to 17%.

Amber in colour, this fortified wine shows some sweet caramel overtones, and then finishes nice and dry.

Buller have been producers of some of Rutherglen's most opulent and concentration fortified wines since 1921. Their Fine Old Tokay is a delicious example with a myriad of flavours that include caramel, toffee, Christmas cake and golden syrup.
