The Yarra Valley is Victoria's oldest winemaking region and one of the most picturesque. Whole bunch pressed to tank, chilled and settled for 48 hours. Wild fermentation in oak took 10-16 days to complete. The wine was made with 30% malolactic fermentation to provide balance, complexity and depth.Ready to drink now but will keep in the cellar for up to 10 years.This wine has a lovely richness of classic chardonnay flavours, woven together with beautiful fine acid and subtle phenolics. This wine is straw yellow in colour with notes of vanilla, butterscotch and honeysuckle on the nose. The palate is crisp with firm acidity. Coldstream Hills has been consistently producing excellent Yarra Valley Chardonnay for years and if anything it keeps getting better. Stone fruit and grapefruit characters are supported by creamy nutty oak.

Toolangi is a state forest just outside Healesville that was devastated during Black Saturday. The excellent vineyards remain, and continue to produce wines of personality and place. The Chardonnay combines varietal characters of quince and crab apple with some delicious nutty oak nuances. Its great value.

A benchmark chardonnay from master wine-maker Rob Dolan out of the Yarra Valley. Packed full of grapefruit, white peach, cashew & nutmeg aromas brimming from the glass followed by a mineral consistency on the palate with extended length on the finish. Will easily cellar for another 5 years if you can wait that long.

Racked directly to barrel after whole-bunch pressing, the fruit batches from each block are kept entirely separate in barrel over the 10 months in oak. Some wild fermentation provided interesting aromas and texture to the final blend. A wine of fine complexity it displays lime and white peach aromas. The flavour is long and seamless on the palate with fruit that is tightly wound with minerality and lime zest. A wine to drink and enjoy now or cellar for 10 or more years.

Tasting Notes: Pineapple, nectarine and lime aromatics along with lengthy butterscotch and biscotti flavours. A well-structured wine to be enjoyed from now to 2020.
