Head Distiller Graham Buller collected prime barrels of Scotch whisky and American Bourbon whiskey, with a dream of creating his perfect blend. The Scotch has an average of five years barrel maturation and the Bourbon two, while the final blend has gone back into bourbon barrels for finishing.

Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass!
