Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. These world-class stills eliminate the damaging impact of heat on delicate botanicals, leaving us free to explore the many attributes of this multifaceted ingredient. To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. This fruity pink gin with its all natural raspberry infused pink hue has been handcrafted for pure tastebud delight. The zero-sugar pink recipe allows for a balanced gin that isnt overly sweet, making it the perfect base for a summer cocktail or the health conscious gin lover.With a classic juniper forward nose. The palate is balanced with soft raspberry notes, leading to a dry earthy finish from the Native Limes and Blood Orange.

Head Distiller Graham Buller collected prime barrels of Scotch whisky and American Bourbon whiskey, with a dream of creating his perfect blend. The Scotch has an average of five years barrel maturation and the Bourbon two, while the final blend has gone back into bourbon barrels for finishing.

Handcrafted in Cairns, containing thirteen botanicals. The Artwork for this limited bottling of 23rd Street Distillery Yuzu Gin was created by local Artist Claire Ishino (SA), the inspiration is Japanese sunsets blending with our Australian climate and of course the Riverland Yuzu fruit. In our Copper Pot No. 3, we vapour-infuse pure Australian sugarcane base with a quadruple burst of citrus and refreshing spice mélange. Fruit is gathered from a single Riverland orchard. Highly fragrant Yuzu and Buddha's Hand fruit are incorporated whole, and from Cara Cara and Blood Oranges we use the hand-peeled rind. Juniper, Chamomile and Coriander plus Australian natives Cinnamon Myrtle, Pink Peppercorn and Strawberry Gum complete the assembly of aromatics. A sense-awakening postcard from today's Riverland. Traditional citrus and botanicals are brightened and heightened by native spices and elegantly perfumed Yuzu and Buddha's Hand. Opulent soft floral citrus aromas set the scene. The refreshing palate presents juicy sweetness followed by lingering zest and warmth. Best served as a thirst-quenching G&T, which reveals its naturally 'cloudy' mixing effect.

These Willamette variety raspberries are grown in the deep south of Tasmanian, in the foot hills of our world heritage Mount Field National Park at the Westerway Raspberry Farm, owned and operated by the Clark family for over 25 years. These raspberries, originally from the north-west of USA are a sweet and juicy variety, great for jams, juicing and of course gin ;). With a very short shelf life and harvest season (4-6 weeks) you have to be quick to get your hands on the real thing, but if you miss out, don’t worry…. we have the next best thing :).
