Australian Pale Malt, distilled in our towering twin copper pots and aged in first-fill ex-Bourbon American oak. Matured to an assertive, balanced complexity over four Riverland summers. Due to its Southern hemisphere birth, swirl anti-clockwise in the glass to waken its slumber and unlock sensory treasures including honey, tangerine, cardamom and brioche.

Distilled in Melbourne by Brogan herself, Evening Light Gin is her fresh and fruity, easy drinking gin. Gentle and zesty, she like to think of it as new age Australian gin. Unique botanicals such as fresh mangos, fresh raspberries and organic white grapefruit juice form a fruity and unconventional backbone, complimented with sweet piney juniper and warm cassia. refreshing strawberry gum and river mint shine through. Tasting Note: Lighter and more delicate in flavour, not alcoholic strength. With a gentle piney juniper and dry coriander seed base lifted up by fresh Australian mangos, raspberries, and white grapefruit juice to create a lively character. Highlighted by the delicate floral flavours of red rose petals and lavender, and warmed by cassia bark. Australian native botanicals of strawberry gum, lilli pilli and river-mint give a gentle, sweet, berry like element and deliciously refreshing. Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.

Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. Head Distiller Graham Buller collected prime barrels of Scotch whisky and American Bourbon whiskey, with a dream of creating his perfect blend. The Scotch has an average of five years barrel maturation and the Bourbon two, while the final blend has gone back into bourbon barrels for finishing.

These Willamette variety raspberries are grown in the deep south of Tasmanian, in the foot hills of our world heritage Mount Field National Park at the Westerway Raspberry Farm, owned and operated by the Clark family for over 25 years. These raspberries, originally from the north-west of USA are a sweet and juicy variety, great for jams, juicing and of course gin ;). With a very short shelf life and harvest season (4-6 weeks) you have to be quick to get your hands on the real thing, but if you miss out, don’t worry…. we have the next best thing :).
