Fruit for this wine is sourced from nine rows of P58 clone chardonnay planted on East West rows directly outside the winery doors. Once harvested the fruit was whole bunch pressed to French oak barriques (50% new) with Indigenous yeast fermenting the un-clarified juice. Barrel maturation took place on lees over the next ten months during which the chardonnay was stirred fortnightly.

Tasting Notes: Pineapple, nectarine and lime aromatics along with lengthy butterscotch and biscotti flavours. A well-structured wine to be enjoyed from now to 2020.

Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. Toolangi is a state forest just outside Healesville that was devastated during Black Saturday. The excellent vineyards remain, and continue to produce wines of personality and place. The Chardonnay combines varietal characters of quince and crab apple with some delicious nutty oak nuances. Its great value.
