Beautifully aromatic and smooth the Elegant Dry Gin is our classic shout out to the London Dry Gin style. Made on the farm in the Macedon Ranges 16,833km away from London. Full of flavour with floral notes, well-rounded and balanced that is just lovely in a G&T.Made with fresh rain water collected off the farm, juniper, orange peel, cardamom, orris root, cassia bark, coriander, star anise and angelica.Serve as a G&T using a good quality tonic with either a slice of dehydrated blood orange or a twill of fresh orange peel and ice.
Big Tree Distillery A Seasonal Gin - Cumquat
A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.
Big Tree Distillery Claude Navy Strength Gin
Robust and wonderful, Claude Navy Strength gin has a hint of the Australian bush. Our heavy hitter farm crafted gin that is full flavour (Navy Strength) with a delicate touch of Southern Sassafras foraged from the Victorian bush. This one is certainly worth adding to the drinks Trolley. Made with fresh rain water collected off the farm, juniper, orange peel, cardamom, bay leaf, orris root, cassia bark, coriander, star anise, angelica and Australian native Southern Sassafras. Serving Notes: Beautiful just neat on ice or as Gibson Martini. Or we still love it as a G&T and we use only good Australian tonics such as Strange Love No8.
Talisker Skye Scotch Whisky
An easy-drinking style, taking the distillery's classically rugged character and softening it out, while maintaining the smoky and sweet notes the distillery is known for. More approachable, but still definitely Talisker. Talisker Skye was introduced in early 2015, named after the beautiful island on which the distillery resides. This expression brings with it a more well-rounded and sweet flavour profile packed with fresh citrus, sweet smoke, peppery spice and traditional Talisker maritime notes. It's matured in a combination of refill and toasted American oak casks, with a slightly higher proportion of toasted casks. Perfect for those who perhaps find the classic Talisker flavour profile a bit too much, not to say that Talisker fans won't enjoy it too. Double Gold | 2017 San Francisco World Spirits Competition.

In southeast Spain, where the finest Murcian lemons, mandarins and sweet Navel oranges grow, Bombay Sapphire works closely with local suppliers and farmers to sustainably source the most exquisite citrus. During the late season’s annual harvest, using techniques passed down through generations, dedicated suppliers and farmers handpick and hand-peel each fruit at its most ripe and allow them to dry naturally under the Mediterranean sun, capturing only the brightest, most aromatic citrus oils that harvest has to offer. In each small batch, the master distiller selects the precise cut of the distillation to ensure each-and-every bottle is a fitting tribute to the region, the suppliers and farmers’ craftsmanship, and the supreme quality of that harvest ensuring the same outstanding liquid is produced each year. Silent Pool Gin
A beautiful, hand crafted gin, made and bottled on the banks of the Silent Pool. A contemporary take on a London Dry Gin Distilled with 24 botanicals including juniper, liquorice root, cassia bark and cardamom for depth and spice, and bergamot orange and kaffir lime for citrus. Rose, lavender, chamomile and linden flowers add floral notes, while local honey delivers a smooth finish. TASTING NOTES A classic gin at heart, full bodied and fresh with depth, clarity and flavour. A rich and clean juniper-driven spirit. The delicate flavours of lavender and chamomile combine with fresh citrus notes and a velvety honey.
Four Pillars Rare Dry Gin
Based on a strong belief people should drink better, not more, Four Pillars is leading the charge to elevate the craft of distilling and celebrate the craft of cocktail making in Australia. Their Rare Dry Gin is made in a truly modern Australian style, capturing the flavours of both Asia and the Mediterranean with a mix of local and exotic botanicals (even using fresh oranges as one of its botanicals rather than dried orange peel). Each bottle is individually numbered, hand labelled and produced in small batches from their small distillery in the Yarra Valley.
Billy Goat's Gin Wise Old Goat
Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.
