The arrival of the late great Daniel Thibault transformed Piper-Heidsieck beyond recognition. The style is now fuller and rounder with elegance and charm. The cepage is an equal blend of all 3 varieties and shows good balance and length. The wine is a fresh aperitif style which is much finer than is often given credit for. Marilyn Monroe famously declared that she went to bed every night with Chanel No5 behind her ears and woke up every morning with a glass of Piper-Heidsieck.

Grand Crus, especially Cramant and Chouilly are always dominant in this blend, but anyway, Cuis 1er cru is always essential to sign the fresh and delicate "Pierre Gimonnet & Fils' style". The house was founded as Pommery & Greno in 1858 by Alexandre Louis Pommery and Narcisse Greno. Under the guidance of Alexandre's widow, Louise Pommery, the house grew into one of the largest Champagne houses and to this day produce elegant and complex Champagne's.

The wine comes from the purest grape juice and it alone allows Laurent-Perrier to craft 'La Cuvée', a champagne of great finesse and a beautiful freshness obtained after a long ageing process in our cellars. Laurent-Perriers style and personality are defined by its very high proportion of Chardonnay. The distinctive, geologically complex terroir of Chavot and the Coteaux Sud d'Épernay in general is very different to the Côte des Blancs and Montagne de Reims areas where our other growers are based, and the style of wine is creamier and with more fruit.

Elegant, with colour changing naturally from a pretty raspberry hue to salmon-pink. A precise nose of extraordinary freshness and a wide range of red fruits: raspberry, redcurrant, strawberry, black cherry. A fresh and sharp attack for this supple and rounded wine. On the palate, it offers the sensation of plunging into a basket of freshly picked red berries. Pinot Noir from 10 different crus located mainly in the South and North areas of the Montagne de Reims including the famous Côte de Bouzy. Notably from the finest crus of Ambonnay, Bouzy, Louvois and Tours-sur-Marne. The grapes from carefully selected plots are sorted and destemmed before vatting. The maceration lasting from 48h to 72h depending on the harvest helps the extraction of the colour and the development of the full aromatic richness of the Pinot Noir, with 5 years minimum ageing.
