Chapel Hill's Michael Fragos loves using the Parsons label to showcase McLaren Vale's diversity and varietal character. To achieve the desired style and to harness the regal varietal flavours of Cabernet Sauvignon, the grapes are strategically harvested to avoid any green tannins or overripe jammy fruit flavours. Full-bodied in style, the palate is both eloquently pure and broodingly complex, supported by fine, savoury tannins. A great companion for a medium rare steak with a solid helping of steamed greens.

Shingleback have always been known for producing quality McLaren Vale wines at some fantastic prices. Take Red Knot for example! Here they re-launched their estate wines under the 'Davey Estate' label and concentrate on single sites. This Cabernet is wonderfully youthful and full of vibrancy. The Grenache Rose & Fiano will be joined by a Montepulciano. Brilliant pale salmon in colour. Lifted bright fresh fruit notes, summer berries, aromatic rose blossom and delicate hints of blood orange. The palate demonstrates all of the hallmarks of what one of McLaren Vales champion varieties can do as a Rose. Strawberries and cream, Turkish delight and bright red berries balance with a bone dry, crisp, moreish acidity and a textural citrus pith finish. We challenge you to stop at only one glass!

Produced from one of Australia's premier Shiraz growing regions, McLaren Vale, comes Woodstock Shiraz. A big, richly flavoured Shiraz with spice and red berry fruit flavours. Sweet, ripe tannins and a complex acid structure gives the wine brilliant concentration and complexity. A perfect medium term cellaring option.

The EJ Shiraz is the jewel in Paxton's organic and biodynamic crown. Awarded 95 points in the Halliday Wine Companion 2017, this wine is the result of low yielding vines that are more than a century old. The flavour is elegant and round and the nose offers vanilla, black current and oak.

The Nosey Parker simply delivers in spades. Swathes of sweetly spiced blackberry woven with pencil shaving oak, backed up by a rich, powerfully long palate. The Nosey is a very versatile wine in that it is perfectly suited to be enjoyed on its own or is equally at home when paired with rich and flavoursome cuisine.

Shiraz and Grenache blend beautifully in many of the warmer parts of South Australia. This AAA is Paxton's 9th release, crafted similar to a Rhone-style wine yet it is packed with Au's Terroir. Bright with juicy red berry fruits and spices on the palate with well integrated oak and tannins, giving this wine a remarkable lengthy finish.

Lloyd Reserve Shiraz is produced from a single vineyard at Coriole, planted in 1919 by Geoffrey Kay. It was first retained as a separate wine in 1989, and is one of Langton's Classified Wines of Australia. This vineyard typically produces a wine of great intensity and can be cellared for many years. The wine is matured in French oak with typically about 40% new.

The pinnacle of Chapel Hill's best parcels of red come together to form The Vicar, a prestige full blooded McLaren Vale Shiraz of great distinction. Painstakingly chosen from selected single-vineyard McLaren Vale sites, The Vicar is overflowing with ripe mulberry and licquorice flavours interlinked with sublime oak influence from over 80% French oak influence.
