Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

A second vodka from Belvedere with a focus on 'terroir' is the Lake Bartezek Rye. Made from the same Dankowskie Diamond rye grain as the Smogory forest edition, but grown on a different Polish estate, according to the producers, the intention here is to highlight “The influence of the distinct soil, topography and climate... When sampled side by side, the two vodkas deliver two completely different taste profiles.” 40% Alc./Vol.

Ink Gin gets its unique colour from the deep natural infusion of petals from an exotic blue flower. Its even more remarkable, when mixed with tonic and it turns from its lustrous blue to a remarkable blush pink. A premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.

And its making just as big an impact 140 or so years later, capturing all the glamour and excitement of New York City in a glass. The Manhattan has stayed true to its origins, mixing American Rye Whiskey, Sweet Vermouth, and traditional Angostura Bitters. During Prohibition (19201933) Canadian whisky was primarily used because it was more readily available. Just like its namesake, and the people who call it home, it has survived wars and prohibition, recessions and depressions. Serving Suggestions:To serve, pour Dr Onyx Manhattan into a mixing glass filled with ice, stir well, then strain into a chilled cocktail glass or in a short glass over ice.
