Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Made in small numbered batches from hand selected rums from the South Pacific and spiced in Australia with a unique dry spiced flavour. No sugar added. No artificial flavours. Australian Owned. Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Unique to Old Kempton Distillery Lavender Malt contains a blend of three pure ingredients Tasmanian mountain water, Tasmanian lavender and malted barley. Ageing in Oak Barrels for a minimum of two years we have a refined and elegant rum that is then paired with caramel and sea salt to produce the nectar of the gods, Capricorn Salted Caramel Rum Liqueur. Capricorn Salted Caramel Rum Liqueur is slightly sweet, however there is a focus on highlighting our aged rum. Its delicious and can be served many different ways. Our old tom style of gin is single shot distilled by hand using a traditional copper pot still. with a selection of queenslands finest botanicals weve created an old tom gin that marries the spice and earthen notes of juniper with sweetness from frankincence and myrrh, and refreshing hits of citrus from native finger limes.

Think tart citrus not sweet, our Citrus Gin has a real citric tang to it. We peel fruit and use the rind of orange, blood lime, and finger lime and then use a combination of fresh lemon and peeled lemon with a little ginger to give this a real zesty finish. Great with tonic or soda.
