The guiding principles of blending are the achievement of harmony and consistency. The White Foil blend is traditionally composed from around 80 still base wines, drawn from different vineyard sites (crus), grape varieties and vintage years. The blend contains approximately one third of each three grape varieties of Champagne. Pinot Noir contributes body, depth of character and life extending tannins, Pinot Meunier adds youthful freshness, vigour and plump fruit character while Chardonnay gibes lightness, elegance and firmness.

The distinctive, geologically complex terroir of Chavot and the Coteaux Sud d'Épernay in general is very different to the Côte des Blancs and Montagne de Reims areas where our other growers are based, and the style of wine is creamier and with more fruit.

Forget those mass produced Champagnes that are sourced from far away vineyards, Champagne Duperrey is sourced from 100% Premier Cru vineyards, whose quality belies its fantastic price! Champagne Duperrey is fresh and full flavoured with a crisp dry finish. It shows fine balance between the elegance of the Chardonnay, and the roundness and fruitiness of the Pinot Noir. Taittinger Comtes de Champagne is the finest expression of the world famous wine from one of the greatest Champagne Houses. First produced in 1952, Comtes is made from 100% Chardonnay grapes from 6 Grand Cru sites in the Cité de Blancs. Showing a pristine pale yellow colour with very light, abundant bubbles which rise uniformly to form a fine mousse. The evocative bouquet opens with notes of pears and fresh cute white flowers. Left in the glass for a time, the nose develops a richness and density of pure character. Once on the palate, Comtes is lively, direct and precise with flavours of candied lemon zest and fresh pineapple. The balance is something to behold. This Champagne's marriage of finesse and aromatic intensity is a promise of further potential, but already offers very pleasurable drinking.
