The cool air flow and long sunshine hours in this area provides extended ripening and hence complexity. Seppeltsfield The Westing Shiraz Barossa The Grounds wines from Seppeltsfield focus on the sub-regionality of the Barossa. The name is derived from the Barossa Grounds project. This was a comprehensive study of the districts sub-regionality led by the Barossa Grape & Wine Association. The fruit is sourced from single-site, estate-owned vineyards. 'Seppeltsfield, under the ownership of entrepreneur and winemaker Warren Randall, has undergone a remarkable transformation.' The fruit for The Westing is sourced from the Western Grounds Vineyard Seppeltsfield V Block. The Westing is vinified through Seppeltsfields historic 1888 Gravity Cellar. The fruit is fermented in open fermenters and matured for 14 months in new and seasoned French oak hogsheads. The Westing is a full-bodied Shiraz in the classic Barossa style. Very dark colour, complex nose of blackberry/mulberry and plums with a touch of oak spice, palate is rich and full flavoured with blackberry/dark plum fruit softly textured and layered structure with integrated vanillin oak and fine tannins on the finish. An iron fist in a velvet glove style which is well suited to quality grilled beef such as rib eye.

Head Wilton Hill Shiraz Barossa Ranges Wilton Hill is comprised of an old vine vineyard, perched atop the Barossa Ranges as it encroaches on the Eden Valley. The soil, a complex polyglot of sandy loams, limestone and ferrous ironstone over a substrata of mottled quartz. The geology is arguably more intrinsic to the makeup of the wine than the variety, or maker Alex Heads deft hand. This is top- drawer Barossa Grand Cru speaking. Make no mistake! Think a swirl of dark fruits, aromas of iodine, lilac and violet, punctuated with a swab of tapenade-encrusted tannins. Dig deeper and there are scents of smoked meats, thyme, lavender and mocha, trailing across a peppery trail of freshness that tows this full-bodied wine long. Aged in predominantly older oak to ensure the richness of fruit is preserved and minimal tannin is absorbed. Vintage Note: A warm October and November advanced budburst andflowering by about two weeks earlier than average.March then saw more stable and mild conditionswhich allowed for a slower finish to the season andensured enough time for tannins to ripen and flavourto develop.
