This sums up the cheerful, laidback attitude of the brewers, who started deliveries of their first commercial recipe inbetween university classes. Although expanding to the gleaming facility they work out of today, Parrotdog maintains its dedication to quality brews that they all enjoy drinking as much as they do making. The Swindler story goes that on earning his freedom in 1795, James Squire and his fellow freed convicts were awarded 30 acres of NSW Crown land. Pioneering was not for the faint of heart! Seeing this, James cunningly rounded up those less daring souls and purchased their grants for a shilling, swindling some 970 acres of prime land off the Crown on which he grew his hops and fortune.
