His Cabernet Sauvignon contains fruit that is hand selected from multiple vineyard sites throughout McLaren Vale to deliver a wine that is full-bodied and full of richness. Copious amounts of blackcurrant and blueberry fruit await with supreme textural oak balancing the opulence.

He took the name from one of the original vineyards, which runs next to the small Bethany Church (Est 1854) across the road from Wirra Wirras century old ironstone cellars. The wine is a blend of 50% cabernet with 37% shiraz and 13% merlot delivering vibrant colour then true cabernet blackberry and cassis aromas and dominant flavour as well, while the rest of the varietal makeup adds a sweeter fruit-cored palate, full with bright red energy and comforting, easy drinking textures. The McLaren Vale can be considered the true home of Grenache blends here in Australia witho some of the oldest vines in the world being dry grown there. Steve Maglieri's Serafino label provides a rich and delicious GSM blend a nose of rose petal and tobacco. The palate flows on with dense coffee and cedar notes that glide across the tongue.

Restrained and supple, lots of ripe dark plum, pepper and spice of Shiraz with the rose petal perfume lift and red cherry taste of Grenache. Lovely lightness and brightness to the back palate with a faint dried herbal and savoury edge, making it terrific immediate drinking but will cellar nicely for 5-10 years.
