Lindeman's Gentleman's Collection Cabernet Sauvignon

In 1843, Dr Lindeman, an upstanding man of formidable character, started his own winery. In doing so, he set his sights on civilising a colony of hard-drinking ruffians by introducing them to more gentlemanly pursuits, such as the enjoyment of a refined drop. This longheld tradition continues today with this handsome Cabernet Sauvignon, rich in blackcurrant and cassis, with a dash of fortified wine for a smooth finish. A fine wine by anyones standard.

Bin 707 is a Cabernet Sauvignon reflection of Grange, intensely-flavoured fruit, completion of fermentation and maturation in new oak, expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australias finest Cabernets.

On the front palate sweet raspberry and dark berry fruits are present. Medium grainy tannins are evident, adding structure; however this red wine remains soft. The mid palate is rich with fruit sweetness, vanillin oak and spice complexity, ultimately finishing dry and soft.

Lachlan Ridge Cabernet Merlot

This 2 litre cask displays a fruit driven bouquet consisting of red berry-fruit, cherry and plum characters. The palate is light, soft and well-balanced with a lingering fruity finish.
