Introducing our Oyster Shell Gin. Developed in collaboration with society restaurant in Melbourne, this is a unique flavour expression of the Australian coastline. The Never Never team uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint to create a unique expression of the Australian coastline and built for contemporary seafood pairings. Fresh sea spray jumps from the glass, bursting with split lime-leaf and fragrant grapefruit zest. The palate expresses saline and savoury minerality of Kangaroo Island Oyster shell and dried Australian wakame. Native greens integrate with morish salted citrus, pine and coriander spice on the mid-palate. The finish is long and luxurious, lending itself to dry martinis.

Pine needle, brushed rosemary, lemon oil, earthy root extending into fragrant pepper. The palate is immediately fragrant with a bright citrus character up front. Oily and intense, the juniper is prominent, supported by the earthy undertones of angelica and orris root and extended by the addition of wooded spices and pepper. The finish is long and complex with a rich creaminess that dries out almost immediately. There is a changing dynamic of juniper, first bright and fragrant that develops into an earthy more resinous finish. The length is full and luxurious. The Triple Juniper is one of those drinks that makes you ask: Why on earth has nobody created a gin like this before? It is brimming with the brightness of the best juniper in the world, air freighted in for freshness. We treat the juniper in three distinct ways, partially steeped, partially in the pot and partially in the vapour, in carefully selected balance, to capture both the bright and the earthy qualities of this wonder berry. Well, it's actually the world's smallest conifer, but let's not get too technical. The copious amounts of juniper give you the best thing about gin in spades. But juniper is a force that needs managing. A carefully selected bouquet of botanicals honours the brilliance of the juniper by complementing it, rather than overpowering it. Australian coriander provides a brighter citrus and less earthiness than its English or Indian counterparts. A predominate fresh lemon citrus influence with a touch of fresh lime and liquorice lifts it up over a root base of angelica and orris. Native pepperberry provides a balancing savoury element without the heavy menthol finish of traditional peppers. A hint of cinnamon the just the right amount of warmth.

Named after a sea beast of myth and legend, The Kraken is unique Caribbean black spiced rum. Enriched with exotic spice notes of ginger, cinnamon and clove. The rich black colour takes its hue from the mysterious ink with which, as legend has it, The Kraken, a beast of epic proportions, covered its prey. While the smooth taste of the Kraken Rum lends itself to be enjoyed as sipping rum, it also tastes great as a key ingredient in a number of rum based cocktails, such as a traditional Kraken & Cola.

Bundaberg's Small Batch edition is crafted by blending the finest Bundaberg rums with the richest aged reserves from the distillery, then matured in sweet cognac and brandy barrels. Smooth and medium bodied, Captain Morgan Original Spiced is a spirit based drink containing a secret blend of Caribbean rums, mellow spice and other natural flavours such as vanilla, cardamom and cinnamon. It gets its distinct richness and amber colour from aging the rum in charred white oak barrels. Captain Morgan Original Spiced is the perfect mix with Cola. Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. Santisima Trinidad 7 year old Rum is tbright amber in colour with slightly sweet aromas of raisins, dried grapes and oak. On the palate there is slight but perceptible sweetness, combined with hints of vanilla and dried sweet almonds.
