Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.

Titos Handmade Vodka is produced in Austin at Texas first and oldest legal distillery. It is micro distilled in an old-fashioned pot still, just like fine single malt scotches and high-end French cognacs and distilled six times. Titos Handmade Vodka is designed to be savoured by spirit connoisseurs and everyday drinkers alike. This time-honoured method of distillation requires more skill and effort than modern column stills, but its well worth it.

Pine needle, brushed rosemary, lemon oil, earthy root extending into fragrant pepper. The palate is immediately fragrant with a bright citrus character up front. We treat the juniper in three distinct ways, partially steeped, partially in the pot and partially in the vapour, in carefully selected balance, to capture both the bright and the earthy qualities of this wonder berry. Well, it's actually the world's smallest conifer, but let's not get too technical. The copious amounts of juniper give you the best thing about gin in spades. But juniper is a force that needs managing. A carefully selected bouquet of botanicals honours the brilliance of the juniper by complementing it, rather than overpowering it. Australian coriander provides a brighter citrus and less earthiness than its English or Indian counterparts. A predominate fresh lemon citrus influence with a touch of fresh lime and liquorice lifts it up over a root base of angelica and orris. Native pepperberry provides a balancing savoury element without the heavy menthol finish of traditional peppers. A hint of cinnamon the just the right amount of warmth.

Introducing our Oyster Shell Gin. Developed in collaboration with society restaurant in Melbourne, this is a unique flavour expression of the Australian coastline. The Never Never team uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint to create a unique expression of the Australian coastline and built for contemporary seafood pairings. Fresh sea spray jumps from the glass, bursting with split lime-leaf and fragrant grapefruit zest. The palate expresses saline and savoury minerality of Kangaroo Island Oyster shell and dried Australian wakame. Native greens integrate with morish salted citrus, pine and coriander spice on the mid-palate. The finish is long and luxurious, lending itself to dry martinis.

The flavours in Adelaide Gin are floral in nature, built up using a traditional range of spices including cardamom, juniper, orris, coriander, and nutmeg, as well as the beautiful richness of Kangaroo Island lavender.Adelaide Gin is a sophisticated dry gin, perfect when served neat. Those who prefer to mix their gin should serve it with something that compliments the floral nature, such as a light tonic with a sliver of orange. As an alternative, Elderflower makes a lovely pairing. It also partners well with other flavoursto create magical gin-based cocktails.

What’s your whim? Say it with Gin. Our Violet Gin is the mood ring of beverages. Transform the broody blues of Butterfly Pea flower to ultraviolet with tonic. A bouquet of heady Australian native botanicals including lemon myrtle, finger lime and pepper berry abounds. On the palate, layers of intriguing flavour unfold, from familiar juniper to juicy finger lime, mellow wattle seed and lingering zest and peppery spice.

Clyde May's Alabama Style Craft Whiskey is made using local ingredients and distilled for 5 to 6 years in charred New American oak barrels. The addition of juice extract and natural essence from apples is what makes Clyde May's distinct. This is a smooth sipping whiskey displaying hints of green apple and cinnamon spice with toasty undertones. We have named this whiskey in honour of Clyde May - a moonshiner by trade and a craftsman by night, who was known for producing outstanding Alabama style whiskey.

Santisima Trinidad 7 year old Rum is tbright amber in colour with slightly sweet aromas of raisins, dried grapes and oak. On the palate there is slight but perceptible sweetness, combined with hints of vanilla and dried sweet almonds.

Inspired by traditional Rock & Rye recipes, Hochstadters Slow and Low combines a master blend of aged rye whiskies, three citrus peels: lemon, grapefruit and orange before being infused with a tiny amount of 100% raw, local honey and pure cane rock candy - creating a drink similar to an Old Fashioned. The drink itself is mellow with slightly sweet flavours exceptionally balanced with citrus, grapefruit and rock candy notes. A smooth, long finish follows, reminiscing of honey, orange and rye whiskey character.
