You'll notice a classic juniper backbone complimented by fresh green apple, native strawberry gum leaf, and chamomile. It is an easy drinking gin - delicate, fresh, and floral. Perfect in a strong G&T, a gin and soda, or a dry martini. For more delicious results, serve with a strawberry.

Weve left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Using the distillery's 120 years of rum-making expertise, the master craftsmen have searched our two-year old Bundaberg Rum reserves and selected a vat that was producing a rum with extra special characteristics. This premium rum was then doubled aged for a minimum of four years in our hand-crafted oak vats until it reached its peak.

Tasmanian Apple Liqueur is made from 100% Tasmanian apples crafted into cider and distilled through our copper still in our 1840s stable. Sweet and clean with subtle apple flavours. Tasmanian Apple Liqueur is a perfect after dinner drink served over ice or as a great cocktail base to create a OKD style mojito with soda, mint and lime.

Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Either way the Embezzler should stand out in your glass.
