Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

Mt Uncle Distillery Botanic Australis Navy Strength Gin

An award winner, this tripled distilled in a copper pot and macerated for 3 days using 14 Australian native botanicals (plus one non-native). The navy strength is a citral driven Gin that has been tricked up with lemon-scented gum, ginger and pepper berry.

Mt Uncle Distillery Botanic Australis Bushfire Smoked Gin

Australia first smoked gin Bushfire is a smokey, unique gin based on an original London dry gin recipe but with the original ingredients substituted for our own Australian native botanicals. The individual botanicals have been smoked with Iron Bark to uncover a rich, smokey palate with sweet hints of maple.

Mt Uncle Distillery Botanic Australis Northern Gem Gin

A dry-styled gin based on an original London dry gin recipe but with the original ingredients including mango leaf, Daintree vanilla and Nerada tea from the Atherton Tablelands alongside our own Australian native botanicals. The structured blend allows it to stand out from any other gin on the market with its unique tropically floral taste. A hint of juniper to start off and then the intensity of the other flavours start to come through. Vanilla, mango leaf and then a hint of tea tannin topped off by a peppery fragrant aftertaste. Big Tree Distillery A Seasonal Gin - Cumquat

A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

Boatrocker Jungle Gin

Inspired by the flavours of South East Asia, fresh makrut (keffir) lime leaves, ginger, lemongrass and kumquats alongside more traditional ingredients such as juniper,coriander, angelica and orris are used in the distilling process. Jungle Gin's bright aromatics work wonderfully with a dry tonic garnished with a lime leaf, yet equally well in any citrus forward cocktail.
