Aqua Vitae: Raspberry Gin is our latest gin; a sweet yet refreshing mixture created with Tasmanian-grown raspberries. Savoury, savoury, savoury! We've really explored what the rotovap can do with our take on a modern gin. We've added habanero and sunflower seed to create a relationship between fruit and savoury. The drink gets a good whack of spice from cinnamon and bayleaf then a touch of sweetness from passionfruit all of which is cold distilled maintaining freshness and vigour. On the still juniper has been macerated, distilled and vapour infused for maximum flavour which compliments and provides the back bone for the rest of the drink.The Modern Classic with a good tonic and wedge of lemon is nothing but exciting. I can not wait for you to experience the pull between the sunflower seed and quinine, the cinnamon hit, citrus and perfectly balance juniper backbone we've so painstakingly balanced. Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

The choice of botanicals is a starting point for any distiller and its inclusion of fresh strawberries that gives this gin its unique blush pink hue. Featuring complex fruit flavours thanks to the inclusion of fresh strawberries, which are steeped together with an array of other botanicals. Delving further into the abundance of native treasures at the Australian National Botanic Gardens, Ad Crescendum var Flosferam Native Gin continues our collaboration with the gardens. This gin is quintessentially Australian, representative of our native flora and highlighting the importance of conservation at the gardens. The nose is crisp and piney. A soft, bright and herbaceous beginning, with delicate floral notes across the tongue. Slight umami. Leads to rich and sweet bush honey notes to finish.

Our classic Dry Gin is juniper forward, lightly spiced with coriander and pepper berry. The fennel links the softer notes of the cinnamon, angelica and orange to give this gin a great mouth feel. Enjoy in a classic G & T or on ice.

Our Navy Gin is bold yet balanced, full flavoured and complex Gin based on similar botanicals as our Dry Gin with a few little tweaks. This fuller flavour Gin will bring to life any cocktail with its Navy Strength complexity, but can be enjoyed simply over ice as a sipping Gin.
