We use fresh lemon and orange rind, lemon myrtle and a selection of five other botanicals to create a gin that sits comfortably in tonic or naked with soda.Garnish with rosemary, sage, thyme, dill, dehydrated lime, dehydrated orange, wedge fresh lemon, orange and juniper berries.

Tidal Lines is made from the classic Headlands Distilling Company gin recipe and then infused with native Illawarra Plums over a ~12 month time frame.This gin combines flavours of fresh juniper, rainforest lime, Illawarra Plum, cinnamon, angelica root, orris root and many others!

Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

Mystery Gin is a sweet Gin, with blood orange the prominent flavour. The flavour is often compared to orange tic tacs.The beautiful blue colour is derived from the Butterfly Pea flower, which is also a natural PH indicator. Mix the Mystery Gin with tonic water or lemon juice to change the colour from blue to pink.

Jail House Gin is a spiced gin with szechuan pepper.A refreshing gin that works well with cucumber or granny smith green apple.

Copperwave distilled Gin follows the classic London Dry style. Made from certified organic spirit, and complex combination of botanicals and extracts, cardamon, coriander, juniper berries and nutmeg, together with virgin rainwater from the Hunter Valley, Australia.

Pine needle, brushed rosemary, lemon oil, earthy root extending into fragrant pepper. The palate is immediately fragrant with a bright citrus character up front. Well, it's actually the world's smallest conifer, but let's not get too technical. The copious amounts of juniper give you the best thing about gin in spades. But juniper is a force that needs managing. A carefully selected bouquet of botanicals honours the brilliance of the juniper by complementing it, rather than overpowering it. Australian coriander provides a brighter citrus and less earthiness than its English or Indian counterparts. A predominate fresh lemon citrus influence with a touch of fresh lime and liquorice lifts it up over a root base of angelica and orris. Native pepperberry provides a balancing savoury element without the heavy menthol finish of traditional peppers. A hint of cinnamon the just the right amount of warmth.

Billy Goats, our Queensland Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals.
