Think tart citrus not sweet, our Citrus Gin has a real citric tang to it. We peel fruit and use the rind of orange, blood lime, and finger lime and then use a combination of fresh lemon and peeled lemon with a little ginger to give this a real zesty finish. Great with tonic or soda.

The wild bush lemons on Lord Howe Island descend from the fruits of the early settlers. They were planted to help sustain them during the long periods between passing ships. They have a unique enveloping aroma, but beware the thorns! In the days of ships and flying boats, a tradition on Lord Howe Island was to throw flower leis into the water from departing launch boats. They inevitably washed ashore to signify their wearers return to the island.

An alluring Australian Craft Gin. Of the earth this gin winds its way from the Victorian Surf Coast, through the forest and up to the mountain towns of Victoria. Coastal Daisy a native foraged from our beautiful Surf Coast home and Australian hops flowers from the Victorian high country with the addition of wedged grapefruit and lemon are vapour infused for a delicate distillate balancing savoury and floral notes with a citrus freshness. Depth is added in the pot by a strong backbone of forest pine Juniper berries, the brightness of crushed coriander seeds, spiced background notes of Australian pepperberries while cinnamon give the distillate a long soft finish. Orris and Angelica root hold it all together in an interesting everyday gin. Pairs great with a local premium dry tonic, as a base for many cocktails, amazing in a classic Martini.

Happenstance Gin has bright citrus notes that jostle for attention with the juniper for a fresh, citrus-forward gin. This guys bringing Juniper, and lots of it! Weve done this by using Macedonian berries distilled on our very own Copper Pot Still, named Ron. Savoury, savoury, savoury! We've really explored what the rotovap can do with our take on a modern gin. We've added habanero and sunflower seed to create a relationship between fruit and savoury. The drink gets a good whack of spice from cinnamon and bayleaf then a touch of sweetness from passionfruit all of which is cold distilled maintaining freshness and vigour. On the still juniper has been macerated, distilled and vapour infused for maximum flavour which compliments and provides the back bone for the rest of the drink.The Modern Classic with a good tonic and wedge of lemon is nothing but exciting. I can not wait for you to experience the pull between the sunflower seed and quinine, the cinnamon hit, citrus and perfectly balance juniper backbone we've so painstakingly balanced.
