Since 1992, Madfish have been producing an exciting range of contemporary, cool climate wines inspired by the wild, coastal and pure characterises of Australia's South West. The wines are made by the dedicated team led by chief winemaker Janice McDonald. The chardonnay displays bright notes of citrus blossom, peach fuzz and melon that merge beautifully with rich nuances of crème caramel, lemon curd and vanilla pod. Modern white wine making techniques were used with temperature control critical from the vineyard through to the winery. The fruit was de-stemmed and crushed then must chilled and pressed off the skins quickly. It was allowed to settle for 72 hours before being racked in a clarified state to a fermentation tank. Each variety was kept separately with a range of different yeast being employed on the two different parcels. It was then transferred to temperature controlled steel tanks. Ø FOOD MATCHING Best served chilled and enjoyed with a light meal such as chicken or seafood.

TASTING:This wine is teeming with fresh fruit. There's ripe apple and pear that intermingle with nectarine and honeydew melon. A creamy and textural palate coats the mouth, with hints of butterscotch and vanilla. A graceful touch of oak brings salted caramel and toffee. Fresh acidity lingers through the finish, and into your second sip. WINEMAKING:Chardonnay fruit from Boyup Brook was machine harvested at night and sent to the winery in the cool hours of the morning. This gave ample time for the juice and skins to be in contact, before pressing off. Fermented in a mix of stainless and older oak to give variation and interest. Staves were added to the tank ferment to build structure and direction in the wine and give it subtle oak influence.
