A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Featuring ginger cake, orange fondant, caramelised pear and brandy snaps on the nose with fresh ground coffee, chocolate ganache and cinnamon apple on the palate. Initially matured in American white oak, this limited 21 Year Old edition 2015 release is transferred into first-fill Matusalem oloroso sherry butts. The Dalmore whisky spends a decade in these exceptional casks for an outstanding finish with Oxford marmalade, macerate cherries and soft liquorice.

The oldest expression in our peated range and a rare opportunity to experience a peated Speyside single malt dating back to the 1980s. Crafted from densely peated malted barley, BenRiach Authenticus aged 30 years is a more intense Speyside malt which carries a delightful balance of WILD HONEY and PEAT on the nose. The combination of the SOFT, CREAMY VANILLA, SUMMER FRUITS and SLIGHT HINT OF COCOA coax the palate, while the INFUSED SWEET PEAT builds gradually to complete the unique character.

More approachable, but still definitely Talisker. Talisker Skye was introduced in early 2015, named after the beautiful island on which the distillery resides. This expression brings with it a more well-rounded and sweet flavour profile packed with fresh citrus, sweet smoke, peppery spice and traditional Talisker maritime notes. It's matured in a combination of refill and toasted American oak casks, with a slightly higher proportion of toasted casks. Ardbeg 10 Year Old Single Malt is typical Islay (eye-la). Light gold colour with exceptional balance and depth on the nose. The aroma is a beguiling mix of toffee and chocolate sweetness, cinnamon spice, Fresh citrus and floral notes of white wine are evident, as are melon, pear drops and a gentle creaminess. There is also fresh phenolics of seaspray and smoked fish. Hickory and coffee emerge on the finish.
