The Deniset Jeune absinthe is one of the few clear absinthes made by the distillery. It is characterised by its freshness and its distinct wormwood flavour. <br>The name Deniset Jeune refers to a former absinthe producer, Henri Denisett, inventors of the pine-bud liqueur called Liqueur de Sapin.

This one is at the same time spicy, herbaceous, fresh, peppery and extremely complex. Very strong chamomile notes give an original and typical herbaceous profile to this absinthe, with a rich aromatic bouquet full of fragrances from the Jura Mountains.
Willett Family Pot Still Reserve Bourbon
Medium copper-brown appearance. Sweeter notes of caramel and corn lift from the glass, with delicate cedar notes and pecan nut tones sit underneath. The palate shows an elegant array of citrus, caramel and peppery spice. Through the mid-palate, the citrus drops away and the caramel and spice come to the fore, intermingled with a touch of dry, vanilla oak. The caramel tones persist through the finish, with lighter notes of citrus and spicy oak lingering.

Few Straight Bourbon Whiskey
Paul Hletko, who launched 'Few Spirits' in 2011 is a man in pursuit of flavour. Hence, his new micro distillery is perhaps best defined by what it doesn't make - vodka. His delicious White Whiskey, which we tasted in 2014, was a positive sign of things to come. His barrel aged whiskeys (Bourbon and Rye) hit the Australian market soon after, and just got better and better. In the 2021 Bourbon you can smell and taste the impact of extra age and experience. Flavours are more integrated and confidently defined, the texture creamier and richer, particularly at the finish where lashings of vanilla malt and dark chocolate coat the tongue. High quality American oak adds a fine astringency to the finish as minor grains peek through, though rye is most salient. Combining length, balance, body and persistence, it's no stretch to say this is a step up from many a Kentuckian. 46.5 Alc./Vol. From a mash bill of 70% Corn, 20% Northern Rye and 10% 2-row malt.

Tasting note: [Batch 133A] Made from New York State organic corn and malted barley from the U.K. Bright topaz / polished copper. Delicate woody aromas of balsa, fresh cut cedar and hints of liquorice before the sugars come to the fore as banana bread, light sticky date, caramel fudge and vanilla. A peppery edge balances the sweeter notes. Youthful and chewy but already delicious with well rounded flavours of salted caramel, nut chocolate, popcorn and black peppercorns. The finish adds dried banana, peach and late caramel fudge. At just over two years young, this Bourbon already has impressive structure and feel. 45% Alc./Vol.
Willett Family Rye Bourbon Whiskey 4 yrs Small Batch
One of the best Rye whiskey around, very good value for this stunning dram. 95 points. Willett is a family owned distillery in Kentucky, with a very strong reputation for their Bourbon and Rye Whiskeys. "A robust rye with dark cherry, burnt vanilla, and spices for days. It’s a delicious rye with a weighty mouthfeel. It’s insanely well balanced with the alcohol so perfectly integrated at 115 proof you’ll forget its there, but you’ll find yourself happily smiling more and more with each dram. Willett Pure Kentucky Bourbon is a small-batch Kentucky Straight Bourbon Whiskey bottled at 53.5% ABV (107 proof), made with pure limestone-filtered water. Tasting Notes: Nose: Aromas of toffee, fruit, eucalyptus, and oak. Palate: Flavors of cinnamon, toffee, caramel, pepper, oak, and spices. Finish: Warm and long-lasting, with lingering notes of nougat, baking spices, and nuttiness.
