Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

A warming spice-driven gin with a unique balance of savoury Australian native botanicals and aromatic winter spices. Sweet orange peel, native strawberry gum and macerated lilly pilli offers a gentle yet full bodied sweet backbone, which is warmed by the fragrant spicy notes of aniseed myrtle, cloves, nutmeg and cassia. Hot green cardamom and black peppercorn are carried through in the long nutty and coffee-like finish provided by the soft oils of native roasted wattle seed. Capricorn Salted Caramel Rum Liqueur is slightly sweet, however there is a focus on highlighting our aged rum. Its delicious and can be served many different ways. Our old tom style of gin is single shot distilled by hand using a traditional copper pot still. with a selection of queenslands finest botanicals weve created an old tom gin that marries the spice and earthen notes of juniper with sweetness from frankincence and myrrh, and refreshing hits of citrus from native finger limes.
