Pot still is an equipment used to distill spirits. It is a slower process and had to be done in batches in a single distillery. Green Spot is an Irish whiskey that mixed pot still whiskeys aged between 7 and 10 years, in order to find the perfect balance on the smell and taste. It opens up with notes of orchard fruits, sweet spices and toasty oak. Full body and a lasting pleasant finish with flavours of warm spices and barley.

On the nose this Whiskey gives a natural honied sweetness with rich vanilla, oak spices and a herbal undertone. These notes develop to orchard fruits of white peach, apple & pear. The taste offers citrus hints of lemon, dried orange and a touch of honeysuckle. These flavours will evolve giving way to a silky vanilla palate with a tingle of spiced pear and warming notes of ginger and clove to finish.

Grace O’Malley Heather Infused Irish Gin is made with 14 aromatic botanicals from the west of Ireland including heather, wild thyme, red clover, blackthorn, fraughan (bilberry) and rock samphire. Rather than being simply a ‘finished’ whiskey, Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Only extremely limited quantities of Yellow Spot have been bottled making it a whiskey to seek out and savour as a true rarity. Flavours of fresh coffee, creamy milk chocolate & Crème Brûlée. Notes of red apples & toasted oak. Its finish is sophisticated & complex with a sweetness throughout, followed by a mix of red grape & dry barley upon exit.
