Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wine is then transferred to temperature controlled stainless steel tanks for maturation. Representing our finest selection of Shiraz from our estate vineyards expressing clearly varietal and vintage, this wine is the pinnacle for us of this noble grape in a cool elegant corner of Australia. Bearing the dark spice and forest floor characters which are hallmarks of Margaret River, wrapped in a fine textured umami envelope of goodness, this wine takes us on a wonderful journey, of which we are merely taking our first steps. Concentrated and vibrant on the palate with a rich diversity of black and red fruit intertwined with nutmeg, cinnamon and sweet spices. The mouthfeel is a lovely balance between powdery, chalky tannins and a playful acidity, finishing with great length and lingering notes of cedar and dried herbs.

Moss Wood Moss Wood Vineyard Cabernet Sauvignon, Margaret River Moss Wood is one of the Margaret River originals (planted 1969; first vintage 1973) and this iconic flagship wine Langtons Classified since 1990 has long been Western Australias leading Cabernet Sauvignon. Figures from the cellarage company Wine Ark show that it consistently rates as Australias Most Collected Cabernet. Moss Wood Cabernet Sauvignon is intensely perfumed and finely structured with cassis-blackcurrant aromas, hints of cedar and touches of violet. The oak and fruit are neatly balanced. With proven ageing potential the wine develops subtle earth/demi-glace briar characters on the bouquet, and complexity and suppleness on the palate. The unirrigated and widely spaced vineyard (now 14.86-hectares) is planted on gentle north-east facing slopes with sandy loams to a gravelly red/brown loams over clay. Typically the fruit is hand-picked, de-stemmed into open tanks and hand-plunged four times a day until completion of fermentation. At the end of vinification, the wine is allowed to macerate for around 10 to 14 days prior to pressing off into barrel. The wine is matured in 30% new and seasoned French oak barriques for 24 months.

The Tate name is synonymous with Margaret River after John Tate helped create arguable the regions most well-known winery, Evans & Tate. Today, Franklin Tate has brought the Tate name back to life with new, exciting terroir driven wines. Franklin painstakingly selected the very best vineyard sites, those that held unique micro-sites within them to enable him to achieve his goal of producing some of the regions best wines. This Shiraz was picked at optimum ripeness and fermented with 10% whole bunch. French barriques were used in the fermentation process to give a softness to the palate, as was a small percentage of Viognier. The result is a great Margaret River Shiraz with grounded savoury notes along with ripeness and spicy lift.

Xanadu Reserve Cabernet Sauvignon is vibrant and robust with great balance from the bouquet of ripe forest fruits and violet on the nose; A refined structure of tannins, oak use and the acidity on the palate; All are great indications of a wine that would benefit from careful bottle maturation for many years to come.
