Swift hails from the elevated slopes of Orange, NSW. The cool climate and elevated vineyard sites are perfect for the production of traditional method sparkling wines. Chardonnay dominates the palate with fresh cut white fruit and citrus, Pinot noir adds elegant and richness to the mid and back palate.

This wine is bright in colour with youthful tints and medium density. The Beechworth Pinot Noir is consistent with its lifted cherry fruit with the oak very much in the background. The red fruit spectrum continues on the palate with Campari like savoury fruit. Soft tannins make for a very enjoyable young, vibrant Pinot Noir.

Established in 1836, Madame Pommery is credited with creating the first vintage brut style of Champagne in 1874, at a time when most champagnes were excessively sweetened with sugar. This wine is a light straw colour with lime hues. The nose explodes from the glass with sweet sherbet, lemon, lime and jasmine aromas. Yeasty and earthy characters add complexity, with added brioche notes. The palate is creamy and refreshing zingy with lemon, lime acidity. The wine has lovely length and softness with a touch of sweetness but a long dry finish. Serve with Sydney rock oysters or lightly grilled scallops topped with lemon zest.
