The Tate family are one of the most famous wine names in Western Australia, especially in Margaret River. It was the Tate family who began Evans & Tate decades ago and today the Tate name is re-born under the Franklin Tate Estates label. Franklin, son of John, has sourced some of the most prestigious vineyard sites in Margaret River and has highly regarded winemaker Rory Clifton-Parks to hand-craft the quality wines, like this traditional Chardonnay.

Devil's Lair The Hidden Cave collection was created to showcase the daring and innovative approach to Margaret River winemaking. Oliver Crawford hits the mark beautifully with this Chardonnay that is bursting with Granny Smith apple aromas. In the mouth the wine is a cascading behemoth of white peach and rich nougat.

It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. The MadFish range by traditional Margaret River producer, Howard Park, is one of great value and regionality. This Semillon Sauvignon Blanc blend is a Western Australian staple with gooseberry flavours along with real citrus zest lift and a cleansing back palate. But it is the complexity in this wine that is truly remarkable and something that isn't often seen in this blend.
