Riesling has a strong affinity for the cooler climes of the World, and it is therefore no surprise that it would produce wines of great character in the Adelaide Hills. Whilst we made the hard decision to graft some of our Riesling vines over to Pinot Noir some years back, we have retained only the most promising clones to produce our Riesling as its perhaps the top white pick amongst staff and remains a labour of love. The Riesling crop, whilst minuscule, showed hallmark varietal characters and fine acidity nurtured by the cool nights and warm sunny days. Careful sampling in the vineyard, paying particular attention to flavour development and acid levels, meant the fruit was harvested on the 14th of March when the ideal balance was reached. Lifted floral aromas and the lively citrus fruit intensity are finely balanced by the tight structure and crisp natural acidity.

This is as fresh as they come: nashi pear, grapefruit, lemongrass, pineapple… I can imagine fresh, dew-dappled bouquets of herbs, citrusy zest finely grated over the top. Reminds me of the Little Creatures Pale Ale kind of aromatics - resinous and celebratory. Layered too, but instead of getting deeper it gets even more spritely, more exciting and aromatic. The finish is clean and refreshing, the colour has a tinge of pink.

Tom Barry is a third-generation master winemaker, and this Gold winning Clare Valley riesling is only further proof of his expertise. Serve as a refreshing aperitif before seafood. Aromas of white nectarine flesh, fresh lime and fragrant orange blossom combine with crushed wet limestone. The palate is well weighted on entry, with full drive and purpose throughout. For John Hughes, the attraction to Riesling is all encompassing. Growing up on a small vineyard in the Clare Valley, and going on to work with some of the brightest Riesling makers in the country before launching his own venture, John is never far away from his beloved grape. John makes classic Australian styles from carefully selected vineyards with an emphasis on purity and site reflection, as well as German-inspired expressions that balance acidity and sugar with singular precision.

Taylors Pinot Gris is a strikingly varietal wine showing notes of baked apple and pear on the nose, with characteristic texture on the palate and soft acidity on the finish. Ideally suited to a whole range of foods, especially flash-barbecued prawns.

There is a youthful restraint to the flavour profile of our One Lovely Day Riesling with promise of even greater things to come. The finish lingers with echoes of grapefruit and sherbet edge wrapped in appealing, gentle texture. Open and lifted, bursting with notes of lemon and lime juice and hints of jasmine; Exquisitely fine natural acid underpins a journey of juicy flavours in the mouth - imagine a burst of vibrant citrus of lemon pulp intensity, all intertwined with unmistakable minerality derived from the chalky soils of Watervale in the region of the Clare Valley.

The hallmark of Tim Adams' Pinot Gris is the balance between flavour sweetness and acidity. Nashi pear, green apple and tropical fruit aromas lead into a full-flavoured, rich and textured palate.
