The richly layered Glenfiddich 15 Year Old single malt Scotch whisky is innovatively matured in three types of oak cask: sherry, bourbon and new oak, before being married in a handcrafted Solera vat that is never emptied, but is always kept at least half full creating a deliciously harmonious and intense whisky.

With a wholemeal and honey quality to the nose and the odd smoky tangent. A sweet, fruity core and a long round finish. Dalwhinnie has a little bit of everything, peat, honey and backbone. A classic malt for everyone.

The gateway to double cask maturation, Aberlour 12 year old double cask matured has balanced notes of fruits and spices. Golden amber with hints of ruby red. Soft and rounded with fruity notes of red apples. Sherried character and fruity aromas balanced with a rich chocolate, toffee, cinnamon and ginger spices. Warming and lingering with some smoky notes and gentle pepperiness.

Part of Diageo's stable, Mortlach enjoys a cult status amongst whisky drinkers thanks to its thick, meaty texture. That unique spirit comes from a complex and unique distillation program, which sees the new make pass through a number of stills of varying shapes and sizes. In the end, it is said that Mortlach distill their spirit 2.81 times. The complex regime results in a thick, meaty spirit - one of Scotland's thickest - and has been prized by independent bottlers and drinkers since the vaunted 16-year-old Flora & Fauna release put it into the public psyche.

Balvenie Caribbean Cask was created by The Balvenie Malt Master, David Stewart, who celebrated an incredible 50th anniversary at the distillery in 2012. 14 years maturation in traditional oak casks & finished in Caribbean rum casks. Rich, sweet and creamy toffee on the nose combines with fresh fruit notes. Rounded with vanilla and sweet oak notes, with a fruity character that develops with time. To create its well rounded flavour, Glenmorangie 18-Year-Old Extremely Rare Malt spends fifteen years maturing in American white oak casks, then approximately 30% is transferred into Spanish Oloroso casks for a further three years. Then both elements are blended back together to create a whisky with a rich bouquet and full, rounded flavour.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. One by one, The Last Great Malts of Scotland will leave their distillery gates. Deemed the bad boy of Speyside, Craigellachie is an unapologetically unique and challenging Single Malt. This is a complex dram, packed with flavour and texture. 13 Years Old, from an 1891 distillery. Bottled at a punchy 46% ABV. A stubborn, sulphurous single malt, condensed in rusted worm tubs on an inhospitable rocky bluff.

At the peak of the Jura distillery's core range (relaunched in mid-2018) sits the Isle of Jura 18 Year Old. This expression aged in American white oak ex-bourbon barrels before enjoying a finishing period in Premier Grand Cru Classé Bordeaux barrels, imparting a rich fruitiness.
