The result is a surprisingly sweet and smoky dram that blends rich caramel and spice notes with fresh green fruit and soft pillowy smoke. Bridging the boundary of the Highlands and Lowlands, Glengoyne is a unique distillery in that they don't use peat smoke to dry their barley, rather they simply use warm air. This gives the whiskies produce a feel of grace and subtlety. Their 12 Year Old Single Malt has a nose of lemon rind and candied apples and glimmer of coconut. The palate is dense and flavoursome courtesy of the hand-selected sherry casks that also impart a textured, long lasting finish.

Established in 2005, Kilchoman (pronounced Kilhoman) is one of the smallest distilleries in Scotland. Based on a farm on the rugged west coast of Islay, Kilchoman is the first distillery to be built on the Island for 125 years. Matured in a combination of both Bourbon and Sherry casks, Kilchoman Machir Bay is a well-balanced combination of rich tropical fruit, peat smoke, light vanilla and intense sweetness.

Japanese whisky is not only Suntory or Nikka, there are many other less known distilleries whose reputation continues to grow. And for this new tasting, They choose a blended malt, the White Oak Tokinoka blended malt. The White Oak distillery, located in the city of Akashi (Hyogo Prefecture), was the first to obtain a license for distilling whisky in 1919. Built in 1888 for the production of sake and shochu, at the beginning the distillery produced only blend whisky in a traditional way and specially reserved for the domestic market. Then the site was modified in 1984 to start producing whisky in bigger quantities. The Eigashima Shuzo Company owner of the distillery, produced since 2007 several single malts named Akashi.

Carefully selected unprocessed whiskies and pure, natural spring water are expertly blended to create this distinctive whisky. A gift from the land that surrounds Mt. Fuji, home to the finest natural spring water. Tasting Notes: Clear amber, faint smoky accent with sweet aroma, redolent of pear and dried fruit. The palate is slightly edgy attack, but well-rounded and mellow. Finish is slightly spicy. A long finish with a hint of white oak and a spreading sweetness.

Yoichi Single Malt is described as bold and strong. Pleasant peaty notes and smokiness originate from traditional direct coal-fired distillation accented with a briny hint delivered by the sea breeze during the ageing process.
