A medley of dark red cherry, cranberry and ripe raspberries, warm spice and hints of mocha. The palate is rich and structured showing, bright fruits with silky and plush tannins which give length and finesse while finishing soft and full of flavour.

Intriguing aromas of rose petals and a summer pudding of lifted red fruits, berries and a hit of cinnamon and Asian spice. The palate is opulent, with intense red berries balanced by soft velvety tannins and supple oak with great balance from the acid reknown in Barossa Grenache. 'The cold, wet 2011 vintage hit the Barossa Valley particularly hard, wiping out huge tracts of vineyards. Dandelion's blend, then, came as a delightful surprise a tender, juicy, seductive drop that made the bottle seem too small. It's a blend of grenache (85 per cent), shiraz (10 per cent) and mataro (aka mourvedre or monastrell). The back label hints at how winemaker Elena Brooks and the Dandelion crew saved the day, "handpicking selected bunches" (that is, avoiding the rotten ones) of the three varieties for co-fermentation and ultimate success. Elderton Command Shiraz is a classic, old-vine Barossa Shiraz first made in 1984 from a single, low-yielding block planted in the 1890s on the banks of the North Para River at Nuriootpa. The vines are anchored in deep, alluvial silt over red-brown earths and limestone. Command Shiraz is typified by raspberry, blackberry, dark chocolate, meaty, aniseed aromas and flavours, pronounced chalky, firm tannin structures, plenty of mid-palate richness and underlying integrated oak. Command has won many international accolades, appearing twice in (U.S.) Wine Spectators annual Top 100 and winning the trophy for Best Shiraz in the World at the International Wine & Spirit Competition in London.

The name of this outstanding wine, 'The Holy Trinity' symbolises the Burge family's migration to the Barossa in the 1850's. The family, the vines and their faith created a tradition of winemaking that has continued for five generations. This wine also pays homage to the Barossa, encapsulating the three traditional red varieties of the Barossa - Grenache, Shiraz and Mourvedre. Under guidance of head winemaker Craig Stansborough, the three varieties come together to make a complex and flavour filled red.

Almost blood red, this is a Cabernet Sauvignon & Shiraz in motion, changing and shifting from red scents of currants and cranberries to the black fruits of plum compote and black cherries, before a touch of cedar, leafy herbs and powdery black spices freshen the finish. The wine has a coolness that belies its power. The expression is as restrained as it is muscular. Richly layered, the fruit completes the structure. Underneath theres an umami earthiness, like scents of camping in the woods. Impeccably balanced. Savour with a rosemary pepper beef rib roast with porcini jus.

Deep garnet in colour, displaying a mixed array of wildberry and red licorice aromas. The palate is fresh and vibrant, juicy and rounded. A very modern styled Barossa Shiraz, which is delicious drinking now that will mature well for the medium term. A variety of fermentation techniques were utilized, but all involved extended skin contact ranging from 15 to 25 days. A cold soak period of up to 6 days occurred before a natural warming to start the fermentation. Upon completion the ferments were pressed to a mix of new and seasoned oak hogsheads, for malolactic fermentation and maturation.
