Forester Estate Chardonnay is a refreshing fruit-driven wine. Pale lemon green in colour with intense roasted nuts, honey, ripe peach and a hint of smoky oak with lingering MLF on the nose. It is medium body with similar profile from the nose. Classic acidity structures with a toasty yet deliciously creamy finish.

It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. In Margaret River, considered one of Australia's premium chardonnay growing regions, Cape Mentelle creates wines of plush texture, depth and power, yet balanced with a fine frame of acidity. This Chardonnay is predominantly from our Chapman Brook Vineyard,established in 1994 in the cool southern half of Margaret River. The cooler climate captures the freshness and vibrancy of the variety. Yellow hay with a bright gold hue. A tropical nose of yellow peaches, melon and mandarin. Generous fruit intensity on the flowing palate, rich with rock melon, pistachio, lemon curd and orange blossom, lifting with a zesty, crisp acidity.
