The fruit for the 2016 Vat 9 Shiraz was sourced from Tyrrells super premium vineyards on the Ashmans property with an average vine age of 50 years. Predominately from the Weinkeller and Short Flat vineyards. Winemaking The blocks were all hand picked and sorted in the vineyard before arriving at the winery. All the fruit was then destemmed but not crushed, followed by fermentation in traditional open top concrete vats. After fermentation the wiens were matured in newer 2700L French oak casks for ten months.

Pale, straw colour with insinuations of green. Overt, ripe varietal fruit characters on the nose - pineapple, citrus and nectarine derived are from the warm vintage conditions. Mineral characters, orange blossom and almond meal along with some lees derived creaminess are all balanced within this multi-dimensional palate.

The Brut Vintage displays a bright yellow-gold colour enhanced by a continuous thread of lingering bubbles. The nose, instantly elegant, exudes delicate scents of citrus fruit (tangerine) announcing a beautiful freshness. Later it reveals an outstanding aromatic complexity with hints of peaches, apricots and almonds. The palate first reveals a very creamy and full-bodied texture. The immediate impression of freshness gives way to an unctuous and well-balanced structure offering aromas of fresh biscuits and ripe fruit (apricots). Giant Steps plays it's part in the rapid accension of Australian Chardonnay back to the position it once held here. That being of the king of white varieties. This is a very stylish numbe from Phil Sexton and his team. Stonefruit, melon and butterscotch characters are supported by vanillin oak and the palate is long and textured with a clean crisp finish.
