Jeff Grosset's Rieslings are amongst the most sought after in Australia. The Polish Hill is superb with intense lingering citrus flavours lively natural acidity and a crisp dry finish. Bollinger Special Cuvee is the result of the delicate blending between harvest grapes and a majority of reserve wines, including some, ages in magnums for more than 15 years in Bollingers cellars. To the eye: A golden colour, distinctive of black grape varieties. Very fine bubbles. To the nose: A beautiful aromatic complexity. Ripe fruit and spice aromas. Hints of roasted apples, apple compote and peaches. To the palate: A subtle combinations of structure, length and vivacity. Bubbles like velvet. Pear, brioche and spicy aromas, notes of fresh walnut.

The fruit for the 2016 Vat 9 Shiraz was sourced from Tyrrells super premium vineyards on the Ashmans property with an average vine age of 50 years. Predominately from the Weinkeller and Short Flat vineyards. Winemaking The blocks were all hand picked and sorted in the vineyard before arriving at the winery. All the fruit was then destemmed but not crushed, followed by fermentation in traditional open top concrete vats. After fermentation the wiens were matured in newer 2700L French oak casks for ten months.

Australia's first boutique winery, Lake's Folly Cabernets is an Australian wine treasure. More Bordeaux in nature than most, the Cabernets is a wine of pristine purity and elegance. With a sense of place that can be tasted in every bottle across all vintages, Lake's Folly Cabernets is a must have for all serious wine collectors and lovers. The 2010 is a young, robust version that will require some time in the cellar to really show its complex characteristics and refined palate.

Margaret River is a world renowned Chardonnay producing region and Pierro can rightfully stake a claim as to why. Incredibly complex, it is a tangle of fine-boned acid, lees complexity, pristine fruit and the most detailed use of good quality oak. Extremely enjoyable now, but will benefit from short to medium term cellaring.

A classic and refined style with some citrus characters framed by bakery and subtle vanilla spice, the iconic Triolet is a classic Bordeaux Blanc blend, incorporating the three varieties of Sauvignon Blanc, Semillon and Muscadelle. It was first produced by Mount Mary in 1987. The varieties are fermented separately in barrel with complexity and palate weight gained from extended lees contact and fermentation on solids.

This Katherines Paddock Chardonnay combines the richness, drive and classicism of one clone with the fine-boned flinty structure and chalky notes of the other. It is stylish with the modern expression of Australian style Chardonnay: tense, taut and sulphidic. It reclaims the middle ground where body, flavour and palate weight co-exist with structure, texture and restrained acidity. This single-vineyard Chardonnay has well integrated natural acidity with rich varietal expression.

Founded in 1818 by Nicolas Francois Billecart and his spouse Elizabeth Salmon in Mareuil-sur-Ay, this is one of the few houses that have remained in the same family. Seven generations on, the house is led by the very talented Francois Roland-Billecart. They espouse three principal aims are finesse, balance and elegance and the Brut rose is testament to this. Pale salmon pink in colour, the nose shows lifted red fruits and fresh pear. The Pinot has given structure to the blend while the Chardonnay has given a wonderful elegance and delicacy. A blend of 40% chardonnay, 20% Pinot Meunier, and 40% Pinot Noir. Of the Pinot component 8% is still wine from the family vineyards in Mareuil.
