Domaine Gerard Duplessis Petit Chablis

Domaine Gerard Duplessis, a family-owned estate since 1895, is renowned as one of the top producers in the Chablis region. Under the stewardship of Lilian Duplessis since 1999, the estate has embraced organic farming practices and meticulously tends to its vineyards. The Domaine's holdings comprise less than 0.7 hectares across two parcels: one situated on the hill behind Vaillons with 20-year-old vines, and the second located behind the Grand cru, specifically Preuses on the plateau, boasting 40-year-old vines. The winemaking process involves direct pressing into tank, wild fermentation and malolactic fermentation completed in tank. The Petit Chablis then undergoes a total aging period of 10 to 12 months in tank before bottling. The Petit-Chablis from Domaine Gerard Duplessis is not to be underestimated. It originates from vines planted on the high, steep slopes of the two banks of the Serein, between 230 and 280 meters above sea level, akin to the Hautes-Côtes de la Bourgogne around Beaune. This AOC wine presents a pale golden color and exudes a bouquet of white flowers, citrus fruits, and flint. It offers a fresh and very dry profile, making it an ideal choice as an aperitif or paired with seafood or andouillette. It's worth noting that this Petit-Chablis is not intended for extended cellaring. The Petit-Chablis from Domaine Duplessis stands apart from traditional expectations of a "petit" Chablis. Reflective of the Hautes-Côtes de la Bourgogne near Beaune, this AOC wine originates from vines situated on the high, steep hillsides of both banks of the Serein, positioned between 230 and 280 meters above sea level. It presents a pale golden hue and offers a bouquet characterized by white flowers, citrus fruits and flint. This wine showcases a fresh and exceedingly dry profile, making it an excellent choice for serving as an aperitif or alongside seafood or andouillette. Notably, our Petit-Chablis is best enjoyed relatively young and may not benefit from extensive aging in your cellar.

Maison des Hâtes Pierrick Laroche Chablis 1er Cru Beauroy

Pierrick Laroche, the proud owner of Domaine des Hâtes, continues the legacy of his family's estate located in the picturesque village of Maligny, in the north-west sector of Chablis. Established by his father in the 1970s, Pierrick's family vineyard holdings have gradually expanded over time, resulting in the current size of around 33 hectares. After obtaining a degree in oenology from Beaune, Pierrick embarked on a journey to gain valuable experience by traveling the world and undertaking various internships. Armed with knowledge and a deep passion for winemaking, he returned home to take over the family vineyards and start producing his own wines. Pierrick's cellars, ingeniously built into the side of a hill in the village, allow for much of the winemaking process to be conducted by gravity ensuring gentle handling of the grapes. The vinification takes place traditionally in stainless steel tanks, while some of the Premier and Grand Cru wines undergo a small portion of aging in used barrels, allowing for a full malolactic fermentation. One of his oldest vineyard plots, Les Châtillons, planted in the early 1970s, sits just behind the hill of the Grand Crus and showcases the meticulous use of barrel aging, which adds complexity and depth to the cuvée. In 2016, Pierrick expanded his range by starting a small négoce operation, sourcing must from friends who predominantly farm on the left side of the river. This addition includes premier crus such as Beauroy, Beauregard and Vau de Vey, as well as the grand cru of Bougros. In 2019, Pierrick inherited 8 acres of vines from his father-in-law in the southern sector of Chablis, around the village of Courgis. This inheritance includes Petit Chablis, 5.5 acres of Chablis and just over half an acre of the premier cru Les Butteaux. Pierrick Laroche's dedication to his craft is evident in every bottle of wine he produces. The name of Pierrick's Domaine, "hâtes" refers to an old agricultural unit of measure, similar to the English rod. It evokes the long and slender fields used for sowing, where the longer rows made plowing easier with fewer turns. The term "hâtes" was often used to describe such fields. Produced from vines around 30 year age which are not owned by the domaine but from a producer who is a friend of Pierrick. Premier cru Beauroy has a cooler more north and eastern exposition facing Fourchaume on the other side of the Serein river giving wines which are typically finer and more mineral than those from Fourchaume which mostly faces south-west often yielding riper wines. This wine is raised in stainless steel and shows notable precision and detail finishing with real persistence and a finely chiselled structure. Domaine Bernard Defaix Petit Chablis

Defaix's Petit Chablis is drawn exclusively from Kimmeridgian-based soils unlike most Petit that generally comes from the low-lying sites on Portlandian limestone to the north of the commune. It's not necessarily the type of limestone but its location that makes the difference, with Defaix's small parcel being very well situated for this level, high on the slopes of Milly. With juicy apple and stone fruit aromas and flavours, pulpy texture, a vibrant, cool close, it's a wine "on the fruit" as the French would say. It reflects both the depth of the vintage and the cool soils of the region. Certified organic.'An expressive nose blends notes of iodine and sea breeze with those of a mix of yellow orchard fruit.
