Pale gold in colour, limpid and brilliant with silver reflections. The first nose is expressive with notes of brioche and vanilla. After aeration, more floral notes (honeysuckle) appear. Well balanced in the mouth with an acidity which brings plenty of freshness. The finish is juicy and mouth-watering with notes of citrus fruits and zest. A beautiful and energetic wine. Olivier Leflaive was co-manager of Domaine Leflaive until 1994 before withdrawing to concentrate on his own venture which he started in 1985. Today the domaine produces wine from some 65 appellations with 85% of the production being white wine. One of Burgundys most respected producers the estate produces a number of domaine wines from its own vineyards alongside its range of negocé bottlings. This Chardonnay has aromas of white flowers, peach, grilled almonds and lemon peel dominate on a mineral background. The attack is full and warm on the palate with a lively and gourmand finish.

This is a newer world style of Chardonnay showing the elegance of fresh cool climate. Once harvested, the fruit was whole bunch pressed with the un-clarified juice that was fermented with inoculated yeast in seasoned French Oak Barriques. The wine by Paringa Estate was barrel stirred fortnightly during the eleven months of maturation and was sulphured early to retain fruit freshness & prevent malolactic fermentation. The bouquet of this wine is a mix nectarine, citrus/orange and complex sulphide solids aromas. The palate has similar fresh citrus & nectarine fruit flavours along with fine acidity. Chardonnay fruit combined with the complexity of barrel fermentation & maturation.
